Helmed by industry legends

Milli is helmed by three major names in the F&B and nightlife industry: Sheen Jet Leong, owner of Rappu and Bae’s Cocktail Club; Vijay Mudaliar, owner of one of Asia’s 50 Best Bars, Native; and LG Han, owner of one of Asia’s 50 Best Restaurants, Labyrinth. Each founder is a leader in their respective fields, known for their skills, vision, and accolades.
While Leong oversees the concept, Mudaliar and Han lead the dining and drinks programme respectively.
Milli: Sky Dining & Bar

Milli: Sky Dining & Bar is where you can enjoy intimate moments with friends and loved ones over shared plates. The atmosphere is intimate and refined with forward-looking interpretations of Singaporean cuisine through food and drinks. Chef LG Han is known for his recreations of Singaporean food at his restaurant Labyrinth, and you can expect the same at Milli.
He’ll be bringing back some of his familiar signatures in reimagined forms, including his signature chilli crab ice cream! Another dish to look forward to is the Singapore oyster omelette. But instead of the typical preparation, Milli’s comes in the form of a souffle made with Japanese eggs and French oysters. It’s a lighter take on an indulgent classic hawker plate.
Meanwhile, chicken rice gets its own rendition with the roasted spring chicken rice paella. Made with a mix of glutinous and koshihikari rice cooked in old mother hen stock, it’s scorched on the bottom to give you crispy rice reminiscent of a claypot.
For a huge treat yourself moment, get the king crab. It’s presented in an interactive format, where you start by enjoying the steamed meat on its own. Savour the sweetness before dipping into either the white pepper or salted egg yolk sauces on the side.
Milli: Lounge

Similar to the dining room, Vijay Mudaliar’s cocktail menu is inspired by local references and everyday familiarity. You get a selection from Singapore-inspired spritz-style creations to cool off to revived classics for the modern palate.
The highlight is the Milli, inspired by the Million Dollar Cocktail by Ngiam Tong Boon, who created the Singapore Sling. Milli’s riff on the classic espresso martini is given a Singapore spin, inspired by our quintessentially local breakfast of kaya toast and kopi. You can even find a drink paying homage to the nightlife classic blend of whisky and green tea, where clarified whisky meets a matcha foam and clarified yuzu in a refreshing but punchy mix of flavours.
