Hot new bars in Singapore: February 2025
New bar: Mizue

Meet Mizue, the chic new spot on Club Street that flows effortlessly from a Japanese kissaten-style cafe by day to a sultry wine bar by night. Opened in November 2024, this gem (which took over 87 Club Street) is all about slowing down and living it up. Think lo-fi beats and steaming cups of coffee by day, and house music with curated wines, sake, and Japanese-Italian bites by night.
The brainchild of wine and sake sommelier Myra Buccat and culinary maestro Vikern Chua, Mizue boasts over 80 unique wines (hello, biodynamic bottles!) and a stellar sake line-up. Don’t miss Japanese-inspired cocktails like the Hojicha Old Fashioned ($25) or the spicy Kappa’s Breakfast margarita ($26). Stay tuned for our full review!
Must-try drink: Koshujikomi umeshu ($19/glass), Shisou Collins ($20)
Expect to spend: $60 – $100/pax (with food)
Opening hours: Tuesday: 6pm-late, Wednesday-Saturday: 10am-3pm and 6pm-late, Sunday: 10am-4pm, closed on Mondays

New bar: 85 Amoy
Tucked away on Amoy Street, 85 Amoy Bar is the kind of spot that feels like a secret worth sharing. Dim lighting, smooth jazz, and a stylish crowd set the tone for a night that’s equal parts sophisticated and intimate. The cocktail menu? Pure genius. From savoury to sweet, every drink is a carefully crafted masterpiece designed to match your mood and palate.
We’re still thinking about the Burnt Grasshopper ($30), a surprising standout for those who don’t lean toward sweet drinks. Think white cocoa, green mint, and a luscious burnt coconut foam. For something extra indulgent, try the Lobster and Cognac ($38), a luxe concoction with lobster-infused spirit, cognac, bitters, and caviar. Yes, it’s on the pricier side, but when the cocktails are this balanced and bold, it’s worth every cent.
Must-try drink: Burnt Grasshopper
Expect to spend: From $20++
Opening hours: Monday-Thursday: 11.30am-2.30pm and 5.30pm-2am; Friday and Saturday: 11.30am-2.30pm and 5.30pm-3am; closed on Sundays
85 Amoy Street, Singapore 069904
New menu: Madame Claude

Madame Claude’s new cocktail menu is giving us major French vibes. Inspired by the legendary Madame Claude, this new line-up is a nod to some seriously stylish French women. Farhan Azman, the genius behind the bar (he also managed the now-closed Set of Six and Lulu’s Lounge) has crafted 12 unique cocktails priced at $25++ each, all named after iconic French women.
Step into a sultry, burlesque-inspired hideaway, where the mood is set by rich shades of red and black, plush velvet seating, and the soft glow of mood lighting. Try Charlotte, a house-made blend of berry-yogurt-infused gin, raspberry, and apricot eau de vie, topped with a refreshing layer of citrus foam. It’s sweet, zesty, and the perfect treat after a hearty meal.
If you’re after something a bit more daring, go for Michelle. It’s a bold combo of Tesseron Composition, coffee liqueur, crème de cacao blanc, and pistachio-infused bourbon. Topped with a biscuit garnish made from pistachio by-products, it’s a nod to the bar’s commitment to sustainability and creativity.
The concise but elevated food menu is prepped by the French restaurant Les Ducs downstairs. So you can expect octopus carpaccio ($24), duck terrine with chargrilled bread ($18), wagyu Philly cheesesteak sandwich ($12) and even caviar and blinis ($148 for 50g). So, if you’re ever in the mood for a night of chic sips and a little mystery, Madame Claude is your place. Cheers!
Must-try drink: Charlotte (berry yogurt infused gin with raspberry and apricot eau de vie)
Expect to spend: $60 – $100/pax
Opening hours: Tuesday – Saturday, 5.30pm to midnight

New launch: Mùa Craft Sake

Vietnam and sake – who would’ve thought, right? But before you shake your head, let’s think about it for a second: rice is at the heart of both cultures, so it kind of makes sense. Enter Mùa Craft Sake, Vietnam’s first sake brand, making its way to Singapore and turning this combo into something pretty darn special.
Mùa, which means “seasons” in Vietnamese, blends local agriculture with the precision of Japanese brewing techniques to craft sakes that are as unique as they are delicious. They use two kinds of rice – Japanese Japonica rice, grown in Vietnam, and the ST25, hailed as the world’s best table rice. It comes in six exciting flavours including guava kumquat, pineapple chilli and sparkling mulberry. Try it for yourself at Draftland with the cocktail Peach Please ($18), and on tap, as well as Omu Nomu, Good Luck Beerhouse and Sushi Zushi.
Must-try drink: Pineapple chilli for a tangy and spicy twist
Expect to spend: From $18
Opening hours: Varies for different bars
Mùa Craft Sake, order online or try at multiple bars

New bar: Somma Bar

Tucked in the buzzing enclave of New Bahru, Somma brings to life a fine dining and cocktail experience rolled into one. And trust us, you’ll want to savour both experiences on separate visits. If you’re reading this, you’re probably interested in Somma Bar on the lower level. Housed in a former school library, it’s all cosy nooks and laidback scenes. Except no one’s going to shush you for chatting too loudly (good thing, too, because you’ll have plenty of questions about the intriguing menu).
At the helm is Mel Chavez, formerly of Smoke & Mirrors, who reimagines forgotten cocktails from the golden age (19th and 20th centuries) with a dash of innovation. The result? Aperitivo, savoury sips, and reimagined classics that wow with every mouthful. If you fancy a bold start, try Margarita for Mel, a coconut-infused twist with Espolón Tequila, crème de cacao, and lime cordial. Feeling adventurous? The Bolognese Muse blends Scotch whisky with beef consommé and vegetables for a savoury, surprising sip.
The bar bites are no afterthought. Think yellow amberjack crudo with pine nut milk and leek oil, or indulgent pasta dishes like radiatori with river crab and capocollo di martina franca. Each dish pairs effortlessly with the cocktails, so you’re in for a flavour-packed evening.
Must-try drink: Bolognese Muse, an innovative savoury cocktail
Expect to spend: $70 – $80 per person
Opening hours: 6pm – 11pm (Tuesdays and Wednesdays); 6pm – 12am (Thursdays – Saturdays); closed on Mondays and Sundays; walk-ins welcome

New Bar: Vino Tinto

Dull after-work plans? We don’t know her. Vino Tinto is here to shake up Singapore’s CBD with a splash of Spanish flair. If the success of power couple chefs Daniel and Tamara Chavez’s other ventures – Canchita Peruvian Cuisine and Tinto Spanish Restaurant – is any indication, this is one opening you won’t want to miss. Named after the Spanish word for red wine, Vino Tinto combines easy elegance with a tempting menu of Spanish coffee, wines (from just $14 a glass), and cocktails.
Over 30 tapas start at $6 – think crispy tostas ramona, smoky pulpo la brasa, and indulgent Vino Tinto Bikini (yes, it’s as fun as it sounds). Pair your bites with a glass of sangria or a bold Rioja, or enjoy an impressive list of over 40 Spanish reds, whites, and house-pour cocktails. To keep things chill, the menu highlights flavour profiles and finishes for each drink – no stress, just good vibes. After all, you’re here to unwind, not overthink.

Junior kicks off CNY in Singapore with a fun and festive start in celebration of the Year of the Wood Snake. Set against a cosy backdrop brimming with Chinese motifs (think Chinatown meets speakeasy chic), the menu dazzles with innovative cocktails and mouthwatering dishes.
Sip on Rolling in Prosperity, a pineapple tart-inspired Negroni, or Smooth Sailing Ahead, featuring bak kwa-infused tequila with smoky, sweet-savoury notes. At $28++ each, these cocktails are as much a conversation starter as they are a celebration in a glass. Even the non-drinkers are covered, with house-fermented kombucha and shrubs like the apple and red dragon fruit combo, available with or without the booze.
Must-try bites include the creamy, umami-packed abacus seeds with yam gnocchi, scallops, and a luscious 63° egg. Or the playful Duck Wrappers, where you become the chef of your own wrap.
