F&B news: Chivas Regal Crystalgold

When you think of whisky, you probably picture a rich amber pour swirling in a glass. But Chivas Regal has flipped the script with Chivas Regal Crystalgold, a – wait-for-it – crystal-clear Scotch. It’s got all the oak-aged flavour and smooth sophistication you expect, just with a sleek, modern glow-up.
It goes through a cutting-edge filtration process that strips away the colour but keeps every bit of that Chivas depth and craft. Sip it neat, on the rocks, or in the brand’s signature Crystalgold Spritz, a mix of elderflower, citrus, mint, and champagne. Expect aromas of apple, vanilla, and butterscotch with hints of orange zest, cinnamon and ginger.
How much: $92

Designed to feel like a living room, this snug den is great if you’re looking for something intimate. Cocktails ($26 each) lighten up with floral, tea-driven riffs on the classics: Chamomile Highball sparkles with vodka and house bubble cordial, the nutty, refined Genmai-tini is made with sake and genmaicha, and the Spicy Margarita gives a zesty kick with mezcal, ginger flower, and togarashi.
For something indulgent, try the Peach & Earl Grey with juicy pineapple, the richly layered Sazerac enriched with Guinness stout and osmanthus, or the decadent Chocolate Martini spiked with oolong and hazelnut.

New menu: Dirty Sips

Dirty Sips, the cheeky little sibling of Dirty Supper, is proving that cocktails can be clever, conscious, and downright delicious. Under the watchful eye (and sharp palate) of Bar Manager Ricardo “Arjay” Abaleta, the new menu takes what most kitchens would toss – think fruit trims, pickled odds, and leftover herbs – and spins them into inventive low-waste drinks with serious flavour.
The line-up splits into two styles: Classics ($18++), where favourites like the Apple Highball (brightened with Jura 12 Sherry Cask whisky and crisp green apple) and the Pickled Lemon Martini (savoury, briny, and utterly addictive) get a house-made twist. Make It Dirty ($20++) is a playground for the bold, featuring creations like Shiitake Happens (a savoury rum-and-whisky mix laced with pickled mushrooms and chilli), Big Juicy Melons (a fizzy clarified milk punch with a tangy yogurt-like finish), and White Boy Negroni (a crisp, herbaceous riff with pickled apricot and Vinho Verde).
Must-try drink: Shiitake Happens, Big Juicy Melons
Expect to spend: from $18 for a cocktail
Opening hours: Monday – Saturday, 6pm to 12am
Address: Dirty Sips, #01-19, 78 Moh Guan Terrace, Singapore 162078
New menu: Live Twice

The refreshed menu at Live Twice feels like a reel of scenes, each cocktail a character in its own right. Under One Life for Yourself ($28++ each), you’ll find drinks that look ordinary but are full of depth. Take the Ceramic Mizuwari, for example. Whisky is mellowed in clay for days, yielding a drink as soft and contemplative as dusk. Or the Vesper Reimagined, a nod to Bond’s classic but polished with Live Twice’s signature Japanese precision.
Flip to …And One for Your Dreams ($28++ each), and the mood shifts. This is where the bar lets its imagination go wild in technicolour. Try Eternal Beauty, an ode to delicate strength, weaving gin, umeshu, and a floral whisper of rose. Sunbeam, as bright and buoyant as its name suggests, is concocted with rum and citrus, sparking a golden, radiant lift. The Moonlit Reverie leans darker, a contemplative sipper where shochu, plum, and tea come together for a nightcap.
Must-try drink: The Moonlit Reverie, Ceramic Mizuwari
Expect to spend: from $28 for a cocktail
Opening hours: Sunday to Tuesday, 6pm to 12am; Wednesday and Thursday, 6pm to 1am; Friday and Saturday, 6pm to 2am

F&B news: Ron Zacapa Brings Luxury Rum ‘Above the Clouds’ to Singapore

If you’re a fan of fine spirits (or you love a good story in your glass), you’ll want to know about Ron Zacapa. Born in the heart of Guatemala and aged at a dizzying 2,300 metres above sea level, Zacapa has earned its reputation as one of the world’s most luxurious rums. This year, it’s bringing that magic to Southeast Asia.
What makes Zacapa so special? For starters, it’s crafted from the first press of virgin sugar cane, giving it a naturally smoother and richer flavour. Next, the rum is aged through the Solera system, moving through casks that once held whiskey, sherry, Pedro Ximénez, and cognac. The result is a complex, layered sip that’s equal parts heritage and artistry.
Two bottles stand out in the line-up. First, the crowd-favourite Zacapa No. 23 (from $200), which blends rums aged six to 23 years for notes of caramel, cocoa, and dried fruit. It’s versatile enough to enjoy neat, on ice, or in a cocktail. Then there’s Zacapa XO (from $400), the pinnacle expression, aged up to 25 years and finished in French oak cognac casks. Think chocolate, dried mango, oak, and spice, with a smooth, lingering finish that feels indulgent with every sip.
Expect to spend: from $200
Find it at: Sushisamba and Sugarhall, and online via Paneco, iShopChangi and Cellarbration

New bar: Horatio

Chock-full of premium-tier spirits, Horatio’s retail emporium is the ultimate playground for any whisky lover. You’ll find bottles of Hibiki, Nikka, Macallan, and even Jung & Wulff rum from Trinidad. But what lies beyond this little alcove? Solve a riddle and you’ll be welcomed to a speakeasy hidden behind a mirrored wall.
While the bar focuses on whisky, it offers a handful of cocktails with gin and tequila bases, so there’s something for everyone. We started strong with the Dragon’s Breath ($26), a spirit-forward cognac-based drink with a mild herbal flavour. It’s the kind of drink you can sip on all night.
For something on the sweet side, the Kueh-Kueh Spirits ($26) brings together gula melaka, coconut, winter melon, and calamansi served in an adorable Peranakan-style teacup. The real treat is the salted egg chocolate sitting playfully on top of it! The flavours of the drink change drastically after taking a bite – it’s almost like magic. (Review by Ashe Liao, Lifestyle Writer)
Must-try drink: Maestro’s Daughter, Dragon’s Breath, The Lost Caravan
Expect to spend: Cocktails start from $26
Opening hours: Wednesday to Sunday, 5pm to 11pm
Address: Horatio, Level 2, Crockfords Tower, 26 Sentosa Gateway, Singapore 098140
New bar: Silly Goose
If you’re in the mood for cocktails with a side of cheek, make your way to Silly Goose, Telok Ayer’s playful new hidden bar, where nothing is taken too seriously (except the drinks). Behind a red door, you’ll find neon signs and all things geese and ducks.
The volume two menu is filled with cheeky plays on the team’s favourite childhood cartoons like SpongeBob SquarePants and Rugrats. Think cocktails like Cereal Killers, a boozy nostalgia trip with Stranger & Sons gin, fruity pebbles milk, and a cheeky citrus kick. Also, look out for the monthly specials – September is all about strawberries!
The food menu serves hearty comfort eats like pulled beef sandwiches and sambal-kissed Brussels sprouts. This just proves that your go-to bar doesn’t always have to be polished; it can be silly, too.
Must-try drink: Cereal Killers, drink of the month
Expect to spend: $30 – $40 per pax
Opening hours: Tuesday – Saturday, 6pm-12am
Address: Silly Goose, 9A Stanley Street, Singapore 068728
New bar: Dutch Door

When we stumbled upon this concept on social media, we thought to ourselves, “Nothing this cool would be in Singapore”. To our delighted surprise, Dutch Door is actually located within the buzzing Joo Chiat! Created by Brandon Grusd (former general manager of Proof & Company) and Tom Hogan (co-founder of Winemouth), this cocktail window is only open for three hours a day on weekends. The philosophy: do one thing and do it well. Think of it like Kyo Kohee’s coffee window, but for day drinking.
It’s situated within Winemouth, so take the stairs up and you’ll see the light at the end – a refreshing cocktail shaken up in front of you and a complimentary snack. We recommend pre-ordering to secure your drinks before you visit the space. It’s a takeaway situation, but you’re more than welcome to chat with Brandon and Tom about anything under the sun. The drinks and snacks will change every month, so be sure to keep an eye out on the brand’s social media to find out what’s in store. (Review by Ashe Liao, Lifestyle Writer)
Must-try drink: Changes every month
Expect to spend: $20 for a cocktail and a snack
Opening hours: Saturday to Sunday, 12pm to 3pm
Address: Dutch Door, 432A Joo Chiat Road, Singapore 427647
New bar: Bar.ter
Just off Boat Quay, you’ll find Bar.ter, a space with a split personality (in the best way possible). By day, it’s all about chill vibes and quality brews, thanks to a collab with Kōhī Coffee. But when the sun goes down, the lights dim, the bottles come alive, and suddenly you’re in a cosy bottleshop-meets-bar playground.
Shelves are stacked like liquid treasure chests: rare bourbons, elegant Scotches, smooth agaves, and a few unexpected gems you definitely won’t see in your average bar line-up. Feeling overwhelmed? No stress. Joseph Seah (yes, he’s an actual Scotch whisky ambassador) and his friendly crew are more than happy to steer you through a few drams until you find “the one.” Sip, learn, maybe even snag a bottle for later.
Must-try drink: The choice is yours
Expect to spend: From $20

New location: The Magic Bar

Do you believe in magic? The folks behind The Magic Bar sure do, and they’re making it more accessible with a new home in Clarke Quay. After charming guests in Ubi, Singapore’s only magic bar is now in the heart of town.
Our enchanted evening started with clever cocktails crafted right before your eyes. We kicked off with Taro Town ($22), a dessert-like pour made with Ube Cream Liqueur, Beefeater Gin, star anise liqueur, cacao, and a dusting of nutmeg. It’s sweet, creamy, and a little whimsical. Prefer a punchier sip? Sze Chuan Goodbye ($22) brings the heat. It’s a whisky sour meets mala spice, with Sze Chuan-infused vodka and rye whisky delivering a fiery, lip-tingling kick.
But the real magic? That happens after dark. A rotating cast of top-notch magicians like Kai Emmanuel, Nique Tan, Stefan Ebinger, and Alexander Y perform intimate sets for just 15 guests a night. Nab a seat at the long table for a front-row experience you won’t forget. Pro tip: check the schedule before booking ‘cos each night brings a different kind of wonder.
Must-try drink: Taro Town, Sze Chuan Goodbye
Expect to spend: $22 for each cocktail, from $54 for Magic Shows
Opening hours: Tuesday – Saturday, 6.30pm – 12am
Address: The Magic Bar, #01-11, 2 Havelock Road, Singapore 059763
New menu: Marcy’s

Set sail through the Seven Seas with Marcy’s latest cocktail menu. The voyage kicks off the moment you step inside – the space, as always, feels like it leapt straight out of a Hans Christian Andersen fairytale. We parked ourselves at the bar for a front-row seat to the action.
First stop: the South Atlantic with Muisca’s Offering ($22). Made with Barsol Pisco, citrus, yuzu bitters, kaffir and Aquafaba foam, this Pisco Sour riff was light and well-balanced, though we wished that kaffir-spiced foam packed more punch.
Next, Tangaroa Tonic ($24) from the South Pacific is a tiki-style tipple bursting with guava, passionfruit and citrus. Again, the flavours could’ve sailed in stronger. Thankfully, Southern Sirens ($22) from the South China Sea came through – a floral gin fizz with elderflower and oolong that was just lovely.
We wrapped our journey in the Indian Ocean with Rakshasa’s Mirage ($22) – a spicy marg that scratched our throat in the right way. Not for the faint of heart!
Must-try drink: Southern Sirens, Rakshasa’s Mirage
Expect to spend: from $22 for a cocktail
Opening hours: Tuesday – Thursday, 5.30pm – 11pm; Friday and Saturday, 5.30pm to 12am; Sunday, 5.30pm to 10.30pm
Address: Marcy’s, 39-40 Duxton Road, Singapore 089503
New menu: Pulsii French Bistro

The French-Japanese bistro and bar has us buzzing over its new menu and an 11-strong cocktail list to match. Expect clever riffs on classics, playful inventions, and even a heartfelt concoction with a paws-itively cute backstory. Bonus: each drink pairs seamlessly with the food menu.
Bella Dame ($22), made with Stolichnaya Elit, St Germain and Aperol, is a subtle riff on the whiskey sour. Expect light, muted citrus notes with floral undertones – palatable if you’re not one for a punchy sour. High Fashioned ($28) leans into a smooth, spiced profile. It’s mellow yet full-bodied, with a warming sweetness from the house-spiced syrup.
For a little fun, Le Coco Club ($22) is a tropical mix of Bacardi, Malibu, pandan syrup, coconut water, and a cream foam that melts like meringue. It smells like vacation, tastes like toasted coconut, and strikes a nice balance between indulgent and refreshing.
Finally, our favourite for the night: Chef’s Mugi Mischief ($20). Named after the chef’s dog Mugi (which means “barley” in Japanese), this cocktail features Hachi barley shochu and popcorn syrup inspired by Mugi’s popcorn-scented shampoo. The result? A creamy drink with light sweetness and an almost ube-like finish. It’s a delightful dessert sip, and even better – a portion of the proceeds goes to Action for Singapore Dogs (ASD).
Must-try drink: Chef’s Mugi Mischief, Bella Dame
Expect to spend: from $22 for a cocktail
Opening hours: Monday – Saturday, 12pm – 2.15pm; 6pm – 11pm
Address: Pulsii French Bistro, 55 Tras Street, Singapore 078994
New bar: The Cocktail Office

Tucked away above Clarke Quay, this intimate speakeasy offers a unique escape, quite literally, as it’s the highest hidden bar in the area. Built with repurposed materials, the space exudes character and warmth, making it a perfect hideout for low-key nights or date-worthy hangs.
Come for the bespoke cocktail experience: think creative concoctions tailored to your preferences. The menu rotates often, but you’ll find well-balanced pours and clever infusions alongside a bartending team that knows their spirits (and your palate) well. Spot familiar faces like the French 75 ($22), Old Fashioned ($28) and Pisco Sour ($25) on the lineup.
But it’s The Cocktail Office exclusives we’re eyeing. Start easy with Black The Affair, a broody and nostalgic mix of Hennessy VSOP, Sarsi, lime, and ginger ale – think root beer float, but all grown up. Shift gears with Night Brief, a playful riff on an espresso martini made with Tim Horton’s cold brew.
Finally, Smoke Signal is the one to end with – a hefty, smoky Negroni layered with mezcal and pink peppercorn that might help you forget your work woes. Each cocktail is priced from $25 per glass, but for the full experience, opt for two hours of free-flow cocktails from $80 per person.

The cocktails.

Mark your calendars, 1-Alfaro’s about to shake up Singapore’s rooftop scene. Brought to you by the team behind Monti, this sky-high stunner crowns the 34th floor of Labrador Tower, a sleek new spot on the southern shore. At its heart, 1-Alfaro is all about la dolce vita. It brings together La Torre, an Italian restaurant, and La Luna, an alfresco bar where sunsets and DJ beats collide.
Each signature cocktail (from $18++) pays tribute to an iconic Italian figure. There’s the bold and brooding Enzo Robutti, a theatrical mix of scotch, Amaretto, Bologna-grown Amarena cherry and basil. It’s a flavour-packed nod to the Godfather actor himself. The Enzo Ferrari sparkles with Prosecco, Lambrusco grapes and sage, capturing the spirit (and speed) of Modena’s legendary carmaker.
For something bittersweet and sculpted to perfection, Antonio Canova blends amaro, peach, tonic and thyme in a spritz-style sipper that’s as refined as its Venetian namesake.

New menu: Cat Bite Club

Rice spirit and agave bar Cat Bite Club has just launched its newest menu ahead of its second anniversary, and it might be better than ever. While fan favourites like Cat Bite margarita and Soju Sprint are still on the menu, Cat Bite Club continues its philosophy on educating guests about agave and rice spirits. This time, it creates variations on drinks through familiar (and not-so-well-known) classics.
The Rattlesnake ($27) is one of the underrated few, named because it’ll either cure a rattlesnake bite, kill rattlesnakes, or make you see them, according to Harry Craddock’s 1930 The Savoy Cocktail Book. Rest assured, no rattlesnake is used here. Cat Bite Club creates its version using Monkey Shoulder scotch, and offers two variations with agave or soju.
A personal favourite is the variation Shiso Foine ($27) made with blanco tequila and shiso raspberry. Earthy and well-balanced, it leans on the smoky and savoury side, perfect for anyone who doesn’t love sweet drinks.
If you miss Cat Bite Club’s old drinks, have no fear. The bar has created a “House Faves” section of the menu, highlighting fan favourites like the Meow Now Brown Cow ($27) and All Eyes On Heat ($27). Plus, with the new menu, the bar has also launched a merch line! Snag yourself a ceramic coaster ($8), lapel pins ($5), beanies ($25), and t-shirts ($35) to rep your love. (Review by Ashe Liao).
Must-try drink: Shiso Foine, Grape Escape, Liver Let Die
Expect to spend: From $27 per cocktail
Opening hours: Daily, 5pm – 12am
Address: Cat Bite Club, 75 Duxton Road, Singapore 089534

New menu: Anthology

Anthology’s new Old Street Dessert Shop cocktail collection is a nostalgic trip down memory lane with a boozy twist. Inspired by Singapore’s iconic desserts, the six-drink menu blends creative bartending with house-distilled spirits. I tried the Kaya Toast ($24), a genius mix of arrack, teh-o liqueur, pandan, and bread milk. It’s rich, roasty, and ridiculously reminiscent of your morning kopitiam run.
Another standout was Chng Teng ($26), a refreshing concoction with longan, wintermelon, and white fungus. Earthy, and surprisingly elegant despite a heavy dose of vodka, it perfectly channels its dessert soup namesake. Other inventive picks include bandung with rose lychee foam, soursop with melaka arrack and nata de coco, and the dramatic ice kachang, which is equal parts cocktail and showstopper.
Pair your drink with Anthology’s inventive bites like laksa tau pok or rendang ragu. It’s a full-on sensory experience with flavour-packed drinks, a music playlist that’s a millennial’s fever dream, and impeccable service.
Must-try drink: Kaya Toast, Chng Teng
Expect to spend: from $25/cocktails
Opening hours: Tuesday – Saturday, 4pm – 12am
Address: Anthology, 10 Circular Road, Singapore 049366

Expect Thai-inspired bar bites, live music, DJs spinning underground beats, and cocktails that tell a story with every sip.
Take the Thai Auntie – a spicy-sweet slow burner with chilli-infused bourbon, lemon, orgeat, and cardamom elderflower. Prefer something savoury? The Thai Punch hits hard with housemade tomato water, mezcal, umami bitters, and sesame oil. Or, go rogue with a bespoke drink crafted to your taste – just name your spirit and flavour vibe. New bar: Hup San Social Club

Slip down to the basement and into Hup San Social Club, a vibey 12-seater bar where three’s a party and four’s a full-blown mood. Helmed by award-winning beverage director June Baek, this hidden gem is where you want to be seen. The debut menu, Do What Brings You Joy, flips the script on standard drinks with cheeky, feeling-driven concoctions.
Curious sips await: the Purple Bubble ($26) delivers a fizzy, floral kick with Hendrick’s Flora Adora, umeshu, and lacto purple cabbage. Craving something quirky? The French Fries cocktail ($26) is exactly that. It’s Monkey Shoulder meets Heinz tomato, chilli, and salt. Or go bold with the Low Manhattan ($26), where tequila mingles with pu-er tea, black garlic, and gula melaka. Doors open Tues to Sat, 6pm till midnight. Come thirsty.
Must-try drink: The French Fries 2.0, Purple Bubble
Expect to spend: from $25/cocktail
Opening hours: Tuesday – Saturday, 6pm – 12am

New menu: Atlas

Atlas unveils its new exquisite cocktail menu, Gazette du Bon Ton, a refined tribute to the creative spirit and timeless elegance of the 1920s to 1940s. Inspired by the influential French fashion journal that shaped Vogue, this editorial-style menu reflects Atlas’s deep respect for cocktail heritage and craftsmanship. Divided into four chapters, it offers an immersive journey through the eras of jazz, art deco, and high society soirées; each chapter ascending in strength from no-ABV to bold pours.
Every cocktail is expertly crafted, like Let’s Misbehave ($25), a spirited blend of American gin, sloe gin, and spiced liqueur. And Midnight in Ruins ($27), which captures the poignancy of legendary parties with rye, cherry port, and grappa. At its core is the Atlas London dry gin ($27, a house-distilled spirit showcasing botanical nuance and timeless refinement.
Must-try drink: Let’s Misbehave, Midnight in Ruins
Expect to spend: from $25/cocktail

New Bar: Dirty Sips

Just when I thought I knew all the hidden bars in Singapore, Dirty Sips came along and proved me wrong. Tucked away behind Dirty Supper (which moonlights as Hua Bee Restaurant by day), this cosy new bar in Singapore is doing something seriously cool – turning kitchen discards into next-level cocktails.
This zero-waste approach isn’t just smart, it’s downright delicious. The Dirty Boulevardier ($18) is a prime example, with duck fat-washed bourbon, sweet vermouth, and a house-made bitter blend that’s rich, velvety, and packs a punch. Prefer something lighter? The Apple Highball ($18) is a total winner, blending Scotch whisky, freshly pressed apple juice, and a sliver of citrus for a crisp, refreshing sip.
Must-try drink: Dirty Boulevardier, Black Garlic and Honey Sour
Expect to spend: from $18
Opening hours: Monday – Saturday, 6pm – 12am
Address: Dirty Sips, 78 Moh Guan Terrace, #01-19, Dirty Supper, Singapore 162078
New menu: Fura

The last time I hit up Fura, I found myself staring down a dessert topped with ants and crushed locusts. Was I terrified? A little. Did I eat it anyway? Absolutely. This time around, the Volume Two menu dials down the shock factor, but that doesn’t mean the team has skimped on bold flavours and boundary-pushing ingredients. The new line-up has something for everyone, whether you prefer your drinks light and refreshing, tart and sour, spirit-forward, or even dessert-like.
Standouts include 3 Crop Corn ($24), a cocktail with a cause. This one champions crop diversification for lower carbon emissions and regenerative farming. It blends sorghum grain from Empirical Soka, corn silk vermouth, and mustard frills from GreenLoopFarms. You’re in for an unexpectedly smooth and earthy sip that makes a solid case for sustainable agriculture.
If you’re up for something even bolder, A Quail Walks Into a Martini ($25) takes a dry martini and infuses it with quail – yes, actual quail. They’ve combined it with gin and dry vermouth, then fat-washed it with caramelised fennel purée, resulting in a rich, dry, and utterly unexpected take on a classic cocktail.
Hungry? Don’t leave without trying So You Bought Happy Corn ($24). A playful nod to its predecessor, So You Bought Sad Corn from Volume One, this dish is anything but gloomy. Somma mafaldine pasta is tossed with charred Talula Hill Farm purple corn and a luscious corn cream – comforting, creamy, and packed with flavour. It’s the kind of dish that’ll have you wondering why corn isn’t the star of every meal. Now, where’s that TikTok-viral corn boy?
Must-try drink: A Quail Walks Into a Martini
Expect to spend: from $24 for cocktails
Opening hours: Tuesday – Saturday, 5pm – 12am
Address: Fura, 74A Amoy Street, Singapore 069893

New menu and concept: Highhouse

Is nightlife dead, or have we just outgrown the way we used to party? The scene has definitely evolved, with venues finding fresh ways to keep the after-hours alive. One spot shaking things up? HighHouse, the luxe rooftop bar and restaurant, now serving up a brand-new dining concept with a glamorous twist.
Enter Dinner & Dance, a cheeky nod to those company parties of the past, but with way more sparkle. Think burlesque and carnival dancers on Mondays, Wednesdays, and Fridays, and live musicians – from violinists to saxophonists – setting the vibe on Tuesdays, Thursdays, and Saturdays. Plus, DJs keep the beats going all week long. I even had a quick “omg” moment with a mentalist and glamorous burlesque dancers, making the night better.
The food may lean on the pricier side, but trust me, it delivers. Modern pan-Asian flavours take centre stage, with elegant bites like Kingfish carpaccio ($18) and saikyo miso foie gras ($28) setting the tone. The showstopper? Squid ink fried rice ($58) served with a fiery sambal that practically guarantees a return visit.
The drinks menu is a global affair, drawing inspiration from six coastal countries: Australia, Malaysia, Peru, Thailand, and the USA. Each cocktail is crafted with a distinct harmony of flavours. Seoul Side ($22) is a refreshing twist on the classic South Side. It features perilla-infused gin, black pepper saline, and a house-made syrup that gives it just the right amount of kick. Meanwhile, Soi Sky ($22) turns tom yum into a cocktail, blending galangal, lemongrass, chilli, and Chinese parsley into a perfectly balanced aromatic syrup.
The service? Impeccable. I mean, when your server circles back four times with complimentary shots, you know they’re serious about keeping the vibes alive.
Must-try drink: Soi Sky (bonus: the squid ink fried rice)
Expect to spend: from $50 (cocktails and food, if you’re sharing)
Opening hours: Monday, Tuesday and Thursday: 11.30am – 1am; Wednesday and Friday: 11.30am – 3am; Saturday: 5pm – 3am; Closed on Sundays
Address: HighHouse, L61-62, 1 Raffles Place, Singapore 048616
New Bar: Luni

By day, Luni is a peaceful retreat: think fragrant brews, bespoke essential oil workshops, and a quiet nook for those who love a little tranquillity with their caffeine fix. But when the sun dips, this unassuming cafe undergoes a stunning transformation. The lights soften, the energy shifts, and suddenly, you’re in Southeast Asia’s first-ever scented cocktail bar, where aroma and flavour work in perfect harmony.
Each of the eight scent-forward creations takes you on a multi-sensory journey, where taste, presentation, and aroma collide. Take Ruxiang ($25), for instance. This bold, musky concoction transforms frankincense into a heady mix of gin, fortified wine, shiitake, thyme, dried chillies, olive, and anchovies. Then there’s Ember ($25), a smoky floral explosion featuring Machetazo mezcal, Campari, fortified wine, dried banana chips, lemon peel, and delicate skeleton leaves.
Prefer something classic? They’ve got all the usual suspects, from a smooth whiskey sour ($18) to a rich espresso martini ($20). And because no good cocktail should fly solo, the menu has an impressive lineup of bites. Think juicy duck meatball skewers ($22), briny sakura clams ($28), and flame-kissed beef ($35) that’s straight-up irresistible.
Must-try drink: Ember, Old Street
Expect to spend: from $20 (cocktails)
Opening hours: Sunday – Thursday: 3pm – 12am, Friday – Saturday: 3pm – 1am, closed on Mondays
Address: Luni, #01-12, 161 Lavender Street, Singapore 338750
New menu: White Shades

If you’re a regular barfly like I am, you would’ve already heard of White Shades and its wonderful plethora of venues that let you bar-hop conveniently in one location. But did you know there’s a hidden bar within its walls? Book the “Hopping through the Shades” concept ($100 per person, inclusive of small bites at levels one and four) to find out where it is! Get a stamp card and unlock the final location by collecting all the stamps at each location when you buy a drink.
The bar hop will guide you through all the White Shades levels and concepts (and leave you pretty tipsy by the end of the night). Start your journey at level one, a kaku highball bar with so many happy hour discounts that you’ll be absolutely spoiled for choice. The izakaya-style menu of snacks pairs perfectly with the many variations of highballs available. I’d go with the PB & J (from $17) which gives you a fun mouth feel thanks to the salinity of salted peanuts, while being fruity and citrusy. Plus, it pairs amazingly with the kaki furai ($16) and beef cubes ($24).
Your next stop is the rooftop for drinks on tap and wine cocktails galore. If you make it here by golden hour, the sunset views are sublime (if a bit warm). The mac and cheese balls ($15) are fantastic if you’re having a cheat day, or go for the garlic soy prawns ($18) for a lighter alternative. Drinks-wise, the refreshing French Blonde (from $19) aka Taylor Swift’s favourite drink and the Golden Horizon (from $18) are the perfect options.
Finally, head to level two for a curated cocktail menu and large plates to satiate the drunken munchies (I speak from experience). You can’t go wrong with the Espresso Obsidian ($25), which is so popular it remains in the new menu. If you’re still hungry after the provided light bites, order a feast at the cocktail bar because I argue the food here is the best. The charred cabbage ($18) is smoky and crispy, and the beef burger is juicy and satisfying.
Once you collect all the stamps, you’ll be welcomed to owner Jiawei’s secret speakeasy! With a focus on tea-based cocktails, get a bespoke drink from the man himself, crafted to your specific palate and taste. The hidden bar is cosy and plays host to small groups through the night, and you’ll be treated to an intimate chat with Jiawei before ending your night. (Review by Ashe Liao).
Must-try drink: Espresso Obsidian, Roselle Symphony
Expect to spend: $100 for the experience, from $17 for cocktails
Opening hours: Monday – Saturday, 4pm – 12am
Address: White Shades, 25 Boon Tat Street, Singapore 069622
Hot new bars in Singapore: February 2025
New bar: 85 Amoy
Tucked away on Amoy Street, 85 Amoy Bar is the kind of spot that feels like a secret worth sharing. Dim lighting, smooth jazz, and a stylish crowd set the tone for a night that’s equal parts sophisticated and intimate. The cocktail menu? Pure genius. From savoury to sweet, every drink is a carefully crafted masterpiece designed to match your mood and palate.
We’re still thinking about the Burnt Grasshopper ($30), a surprising standout for those who don’t lean toward sweet drinks. Think white cocoa, green mint, and a luscious burnt coconut foam. For something extra indulgent, try the Lobster and Cognac ($38), a luxe concoction with lobster-infused spirit, cognac, bitters, and caviar. Yes, it’s on the pricier side, but when the cocktails are this balanced and bold, it’s worth every cent.
Must-try drink: Burnt Grasshopper
Expect to spend: From $20++
Opening hours: Monday-Thursday: 11.30am-2.30pm and 5.30pm-2am; Friday and Saturday: 11.30am-2.30pm and 5.30pm-3am; closed on Sundays

New menu: Madame Claude

Madame Claude’s new cocktail menu is giving us major French vibes. Inspired by the legendary Madame Claude, this new line-up is a nod to some seriously stylish French women. Farhan Azman, the genius behind the bar (he also managed the now-closed Set of Six and Lulu’s Lounge) has crafted 12 unique cocktails priced at $25++ each, all named after iconic French women.
Step into a sultry, burlesque-inspired hideaway, where the mood is set by rich shades of red and black, plush velvet seating, and the soft glow of mood lighting. Try Charlotte, a house-made blend of berry-yogurt-infused gin, raspberry, and apricot eau de vie, topped with a refreshing layer of citrus foam. It’s sweet, zesty, and the perfect treat after a hearty meal.
If you’re after something a bit more daring, go for Michelle. It’s a bold combo of Tesseron Composition, coffee liqueur, crème de cacao blanc, and pistachio-infused bourbon. Topped with a biscuit garnish made from pistachio by-products, it’s a nod to the bar’s commitment to sustainability and creativity.
The concise but elevated food menu is prepped by the French restaurant Les Ducs downstairs. So you can expect octopus carpaccio ($24), duck terrine with chargrilled bread ($18), wagyu Philly cheesesteak sandwich ($12) and even caviar and blinis ($148 for 50g). So, if you’re ever in the mood for a night of chic sips and a little mystery, Madame Claude is your place. Cheers!

New launch: Mùa Craft Sake

Vietnam and sake – who would’ve thought, right? But before you shake your head, let’s think about it for a second: rice is at the heart of both cultures, so it kind of makes sense. Enter Mùa Craft Sake, Vietnam’s first sake brand, making its way to Singapore and turning this combo into something pretty darn special.
Mùa, which means “seasons” in Vietnamese, blends local agriculture with the precision of Japanese brewing techniques to craft sakes that are as unique as they are delicious. They use two kinds of rice – Japanese Japonica rice, grown in Vietnam, and the ST25, hailed as the world’s best table rice. It comes in six exciting flavours including guava kumquat, pineapple chilli and sparkling mulberry. Try it for yourself at Draftland with the cocktail Peach Please ($18), and on tap, as well as Omu Nomu, Good Luck Beerhouse and Sushi Zushi.
Must-try drink: Pineapple chilli for a tangy and spicy twist

New bar: Somma Bar

Tucked in the buzzing enclave of New Bahru, Somma brings to life a fine dining and cocktail experience rolled into one. And trust us, you’ll want to savour both experiences on separate visits. If you’re reading this, you’re probably interested in Somma Bar on the lower level. Housed in a former school library, it’s all cosy nooks and laidback scenes. Except no one’s going to shush you for chatting too loudly (good thing, too, because you’ll have plenty of questions about the intriguing menu).

Aperitivo, savoury sips, and reimagined classics that wow with every mouthful. If you fancy a bold start, try Margarita for Mel, a coconut-infused twist with Espolón Tequila, crème de cacao, and lime cordial. Feeling adventurous? Named after the Spanish word for red wine, Vino Tinto combines easy elegance with a tempting menu of Spanish coffee, wines (from just $14 a glass), and cocktails.
