1. Cat Bite Club
It’ll be criminal not to kickstart the list with a bar that actually specialises in agave and rice spirits. Hidden behind Monument Lifestyle at Duxton, this quaint 11-seater spot has over 100 agave spirits and counting. Its signature Cat Bite Margarita ($26) doubles down on the booze with Codigo 1530 Blanco Tequila and Siete Misterios Espadin Mezcal. The result? A perfectly balanced concoction with a familiar sharpness of citrusy flavours.
If you like a sour tang with a spicy twist, go for Ghost’een ($24) shaken with Koch Elemntal Espadin Mezcal, Salmiana Mezcal, mangosteen, chilli tincture and amaro. Though technically not a margarita, the familiar sour, sweet and umami flavours remind you of the classic cocktail with every sip.
