An authentic yet affordable taste of Osaka
Helmed by chef Yamamoto Yoshiki – who brings culinary experience from Osaka to Shanghai – Haku Sushi is where you can savour Kansai-style sushi. Originating from Osaka, this style of sushi is distinctive for its vinegared and lightly-pressed sushi rice, and sashimi in its purest form. At Haku Sushi, the sushi rice is seasoned with a secret blend that gives it a slight hint of sweetness.
Even though the omakase lunch menu is priced affordably, I was pleased to see luxe ingredients in the line-up. Out of the five pieces of sushi, you can expect at least one premium seasonal highlight, such as uni, chutoro, ikura or Hokkaido scallop.

Here’s where it gets interesting: the restaurant’s omakase lunch menu follows a unique tiered pricing structure that lets you continue feasting at a steal. Once you’ve polished off your first five-course set at $19, the price for your next round drops to $18, followed by $17 for every round after that.
In other words, the more rounds you eat, the more affordable each round gets. Spoiler: I had three rounds of sushi and my craving for Japanese food was more than satisfied.
A delicious surprise in every round

In classic omakase fashion, leave it up to the chefs at Haku Sushi to surprise you. My first round of sushi featured aka ebi, ikura, shima aji, anago and chutoro maki. I appreciated the balanced fish-to-rice ratio, and the freshness of the ingredients – especially the sweet, juicy aka ebi and soft, fluffy anago.

I polished it off and was on to my next round, comprising chutoro, kohada, hirame, Hako sushi and yari ika. Of the five items, the Hako sushi piqued my interest the most. This traditional Kansai-style pressed sushi came with unagi, prawn and a dollop of cheese that added unique creaminess. The yaki ika also deserves a shout-out for its tenderness.

With room for more, I went for my third and final round. My plate was a medley of three-colour tuna, seabream madai, salmon belly, kanpanchi and scallop hotate. I particularly enjoyed the smooth, meatiness of the tuna, and delicate sweetness from the hotate.

Sushi omakase aside, Haku Sushi also offers premium add-on dishes at $9.90 each. Take your pick from ikura kobore (an overflowing salmon roe bowl), special negitoro and uni sushi.
A heads up: the omakase experience ends with complimentary housemade tamagoyaki and a bowl of seasonal soup, so you might want to leave room for them.
A premium dining experience sans the splurge
Omakase dining is becoming more accessible in Singapore, and we love to see it. Haku Sushi’s rolling omakase lunch is where I’ll find myself when I need a sushi fix, but don’t want to fork out a fortune.
