Meet the brains behind Sushidan
Sushidan’s arrival in Singapore comes with big shoes to fill. After all, it’s founded by storied Japanese chef Hiroyuki Sato, who previously took the helm at Michelin-starred Sushi Tokami. Chef Sato later introduced his restaurant concepts Hakkoku and Sushidan to Tokyo, which have both carved their names in the Edomae-style sushi scene.
For the uninitiated, think of Edomae-style sushi as a pure, traditional form that dates back to Japan’s Edo period over 200 years ago. The fish is never served raw, but instead cured, marinated or simmered to preserve and enhance its flavours. Paired with sushi rice seasoned with red vinegar, you’ll get umami-rich and intensely flavoured bites.

I was lucky enough to catch chef Sato during my dining experience, and even got to try sushi personally prepared by him. Let’s just say his nimble artistry was so quick that my camera could barely keep up!
Leave it all up to the experts
With prices as affordable as $19.90 per omakase set, it’s easy to draw sceptics – and I’ll admit I was one of them. I went with the slightly more premium omakase set at $29.90, which includes six pieces of sushi, a handroll, chawanmushi, miso soup, and three mini-dons.
Kicking things off on a strong note was the first course, chawanmushi. The egg custard was silky and smooth, elevated by a robust, umami-rich seafood flavour. Once that was polished off, my assigned chef got me started on the sushi line-up.

From akami and salmon to engawa and chutoro, every piece came well-prepared and seasoned, hitting the mark for Edomae-style sushi. Unsurprisingly so, as the seafood is freshly sourced directly from Toyosu Market and salmon air-flown daily from Norway. Coupled with the renowned red shari – prepared with a Kyoto and Tokyo Akazu blend and premium rice from Akita Prefecture – it’s a recipe set up for success.
My standouts? The engawa with a luxurious, melt-in-the-mouth texture, and the akami for its intense meatiness. I also enjoyed the negitoro handroll, a nicely seasoned mix of minced fatty tuna and freshly chopped green onions.

Don’t forget to leave space for the three mini-dons, featuring mentaiko salmon, cubed sashimi and smoky unagi. I was pretty stuffed at this point, but couldn’t resist the indulgent seafood.
If I had to pick a bone with this omakase experience, I’d have liked a dessert to properly round off the meal. But, hey, that’s just a minor grievance coming from a sweet tooth.
A culinary experience sans the splurge

My experience at Sushidan’s first outpost in Singapore has set a new benchmark for affordable omakase. Quality doesn’t necessarily mean having to splurge. This $29.90 experience satisfied my craving for Japanese fare, complete with fresh seafood from Toyosu Market, no less.
Affordably priced from $1.99 for sushi, $2.99 for sashimi and $3.99 for handrolls, the a la carte selection also looks oh-so-irresistible.
