8. Saicho

Perfect for pairing with dinner, aperitifs or for celebratory toasting, Saicho is the creation of Hong Kong native Natalie Chiu and her partner Charlie Winkworth-Smith, who first established the luxurious effervescent tea brand in the United Kingdom. Having launched in Hong Kong in 2021, the three flavours of sparkling teas (Jasmine, Darjeeling, and Hojicha) are available in 200ml and 750ml bottles and are designed to be served chilled. Each tea has been selected from specific regions and harvested at a specific time to create varying acidities, sweetness and mouthfeel to complement different foods and flavours. The brewing process starts with brewing the tea leaves at a low temperature for 24 hours to extract the delicate aromatics without over-extracting the bitter and astringent compounds, to produce a clean, crisp and complex flavour profile. The drinks are then carbonated to enhance the natural aromatics of the tea.
