True to its name, this Sheung Wan restaurant is a butcher and meat specialist that serves course after course of amazing food, leaving you wanting more
It’s a well documented fact that here at Honeycombers Hong Kong, we take our food very seriously. We sing about restaurants that we are obsessed with (we’re talking about Arbor, A.O.C. Eat & Drink and ON Dining) and have numerous local hang outs on rotation. So when we were recently invited along to try the new menu at Blue – Butcher & Meat Specialist, a restaurant in Sheung Wan known for delivering premium beef to Hong Kong, we jumped at the chance to sink our teeth in.
Blue – Butcher & Meat Specialist

This dimly lit restaurant is filled with neon red and blue lights, brown leather booths, and a large open kitchen area that is tucked away in the corner. There’s no question how edgy the designs are at Blue – Butcher & Meat Specialist – or Blue as it’s known to its regulars – but also how relaxing the vibe there is too. When it comes to catching up with close friends or wooing your tinder date, this is the spot.
What we recommend?
On arrival, we ordered two drinks – Wild Night is Calling, a gin based cocktail and a Negroni Cubano made with cuban rum. The gin cocktail was refreshing and light, slightly sour and not too sweet with hints of lychee flavours. On first taste, the negroni was incredibly sweet, but as all good things take time, wait as the ice sphere slowly melts and you can begin to really taste the flavours of the cuban rum.

We started off with the Grass Fed Steak Tartare, which had a glazed smoked egg resting on top. The tartare was well marinated, had a smooth texture and almost melted in your mouth. Add in the charred bread and the refreshing diced tomato and it’s a hit of flavours and textures on your tastebuds. If you’re looking for a good entree, we would place our bets here!

After the tartare, we tried the Roasted Baby Beetroot which flavours and taste were far superior than anticipated. Who would have thought that vegetables could be so flavourful and have such a kick? (Said no vegan/ vegetarian ever). The baby beetroot rested on a savoury thick and fluffy looking pink beet hummus and was garnished with burnt lemon vinaigrette which added a refreshing component.

Later for the main course we had the Australian Wagyu Sirloin with Black Truffle Butter and the Pan Seared King Ora Salmon. With an Australian and an American at the table, (who both love a good steak) that is served medium rare, Blue – Butcher & Meat Specialist absolutely delivered – its colour perfectly light pink. Even without the mustard and tomato sauce the rosemary, salt and pepper did it justice! The salmon on the other hand, though slightly dry on this occasion, had a crisp skin, sat on top of a garlic puree and was topped with olive salsa, making it flavourful, light, savoury and slightly tangy.
Would we go back?
It shouldn’t surprise you, but absolutely. If you’re ever looking for a quiet place away from the busy city to enjoy some delicious food and great cocktails with close friends, family or a date, Blue will definitely deliver.
