You’ll then want to settle in for a pre-dinner aperitivo at the contemporary bar and lounge, where a seemingly endless selection of wines, creative cocktails and craft beers await. Then, as dinner time swings around, head toward the theatrical open-flame grill which – rightfully so – takes place centre stage, before making your way to the garden – the heart and soul of Uma Garden.

And while you’re grazing on shared plates and sipping your way through the stellar cocktails, you’re surrounded by tropical plants and the sparkling night sky. The kitchen team at Uma Garden believes in one thing: letting quality produce speak for itself. And by using the primitive technique of grilling over a wood fire, the true taste of each premium ingredient can truly shine – all with a subtle smokiness after being kissed by fire. We’re talking Wagyu beef and juicy prawns ember-grilled to perfection, where the richness and flavours of each delicacy are enhanced by flames.
For even more surf and turf, graze on the enormous wood-fired Australian Wagyu Tomahawk, then go big with a kilo of grilled Grouper. It’s served with burnt rosemary, kaffir lime and capers in clarified butter, plus Spanish-style roasted vegetables on the side. You’ll want to pair this shared feast with the equally smoky cocktails, like the Wood Fire Lemon Sour with coconut charcoal, or the Roasted Tiki with wood-fired pineapple.

Start with the homemade beef croquettes served on a burnt eggplant emulsion, before moving on to the oh-so succulent 24-hour slow-cooked pork belly, or the Australian Wagyu skirt steak served with chimichurri and salsa criolla. Not into carnivorous eats? There are plenty of veggie-friendly and char-grilled plates too, from the roasted pumpkin and the stuffed bell pepper, to the sweet potato gnocchi with truffle parmesan foam, crispy sage leaves and parmesan crust.
