
67 on Scotts, Orchard Road’s new premier wine-led dining, and social destination by 67 Pall Mall Singapore, presents its first chef residency series ‘Singapore After Dark’ this August. Running across four weeks, the series hands the kitchen to four chefs whose stories reflect the modern Singaporean table.
For Singapore After Dark, Chef Raj Kumar of Firangi Superstar, presents dishes that reflect both his Tamil heritage and the experiences that have shaped him as a chef. Childhood memories sit alongside contemporary techniques, creating a menu that is playful, personal, and unmistakably Singaporean.
On Saturday 22nd August, 7:00pm – 9:30pm, Chef Raj presents a one-night-only course dinner with a menu inspired by the journeys, cultures and conversations that have shaped his cooking. Highlights include This Is Also Not Aloo Gobi, made with Romanesco cauliflower, spiced potato foam and cashew-raisin vinaigrette; Back in the Saddle Lamb, with tandoori spiced lamb, confit garlic and curry leaf; and Coastal Highlands, showcasing Malabar crab cutlet, tomato relish and Kashmiri chilli.
Chef Raj’s residency reflects the Singapore of today: a city where cultures meet, traditions evolve, and food does the storytelling.
