
67 on Scotts, Orchard Road’s new premier wine-led dining, and social destination by 67 Pall Mall Singapore, presents its first chef residency series ‘Singapore After Dark’ this August. Running across four weeks, the series hands the kitchen to four chefs whose stories reflect the modern Singaporean table.
Few chefs have shaped Singapore’s dining scene as quietly and consistently as Eugenia Ong. With more than 40 years in the food and beverage industry, her journey spans her family’s Jawa Timur restaurant, private catering for some of Singapore’s most prominent families, and now Table at 7, where she shares her deeply personal vision of modern Indonesian cuisine.
On Saturday 29th August, 7:00pm – 9:30pm, Chef Eugenia will present a course dinner menu with wine pairings, opening with the Balinese “Bebek Goreng” Crispy Duck Wrap, featuring spiced pulled duck and crispy duck skin with sambal mata, slaw and lettuce. This is followed by Slow-Braised “Buah Keluak” Wagyu Beef Cheeks, served with porcini mushroom risotto, sautéed mushrooms, and broccolini, and closes with a Kaya & Caramelised Banana Crumble, finished with young coconut ice cream.
Chef Eugenia closes Singapore After Dark with a reminder that Singapore’s food culture is not defined by borders, but by the people who have made this city home and enriched its table over generations.
