
For one Sunday only, Nikoi and Cempedak Private Islands will be taking over Wildcard Singapore’s Sunday Test Kitchen with a five-course menu inspired by regional flavours and ingredients from across the Indonesian archipelago.
Leading the kitchen is Chef Dika, Food & Beverage Director of Nikoi and Cempedak, alongside Cempedak’s Head Chef Rozaq and one of Nikoi’s chefs — a rare off-island collaboration bringing together dishes rooted in Indonesia’s rich culinary traditions. Highlights include Gohu, a fresh lobster dish marinated in coconut milk, lime, chilli and basil, inspired by the raw seafood traditions of Ternate; Balinese Harmony, featuring slow-roasted ayam betutu with nasi campur and sambal matah; and a Spicy Chocolate Tart with turmeric cream for dessert.
