1. DiVino

Going for a ‘no menu, no limitations, no rules’ approach, the DiVino Group is allowing its guests the flexibility to choose the way they want to enjoy the prized white truffle. The most popular choice is having the white diamonds with fresh egg tagliatelle or risotto. But, if you’d like to try something different, you can also go for the pairings suggested by the chefs. 2. Soil to Soul

Presenting traditional Korean temple cuisine with contemporary twists, Soil to Soul is releasing four unique dishes, created by Chef Gu Jin Kwang, to pay homage to the exquisite white truffle this season. There are the Asparagus with Truffle Mash Potatoes; Royal Mushroom and Truffle Consommé; Carrot and Zucchini Noodles with White Truffle; and Deep-fried Yam with Truffle Grain Syrup. In addition to the two grams of white truffle contained in each dish, you can enhance your experience by adding extra white truffle to your meal for the ultimate white truffle galore.

3. Castellana

Using around five grams of the finest truffles from Alba in each dish, Castellana is introducing a luxurious four-course white truffle degustation menu, complete with Piedmont wine pairings. The menu begins with a whipped Mountain Egg alongside braised leek, black pepper, and Alba white truffle. This is followed by a pasta dish known as Tajarin. Next, you can choose between the Brittany Blue Lobster with potato foam and white truffles, or Racan Pigeon with white truffles as your main. Finally comes the white truffle tart, which is filled with Piedmont hazelnut creme ganache, and topped with gold leaf and fresh white truffle.

4. Carbone

Newly led by Head Chef Jack Carson, Carbone is presenting three lavish dishes to showcase the white truffle this season. These include the Truffle Eggs Crostini, Truffle Fettuccine slicked with Sardinian butter, and Ricotta Tortellini – all topped with a blanket of fresh, delicate truffle shavings. With Carbone’s bespoke tableside treatment, you can choose your own piece of ‘white gold’ by the whole or by the gram, then add its morsels to any of your favourite dishes. 5. Radical Chic

One of the latest restaurants in Hong Kong, Radical Chic is releasing a new, five-course White Truffle Degustation Menu with Italian wine pairings. This menu starts with the White Truffle and Amaretti Biscuit, followed by Eggs Four Ways – a dish with Japanese sea urchin, Sturgeon Caviar, and Salmon Ikura, served with cream of potato and topped with white truffle shavings. Other highlights include the A5 Wagyu Beef Raviolio “Dumpling”, and the Brittany Blue Lobster (available at an extra charge) or the Muscat Grape-glazed Venison as your main. To finish, there’s the Truffle Hunt, a dessert made with mascarpone mousse, vanilla cream, and dacquoise. This is covered with Venezuelan dark chocolate and shavings of the white diamond.

6. Giacomo

Having opened a few months ago as a new restaurant in Hong Kong, Giacomo is celebrating the white truffle season with five exquisite creations. These include the Confit ‘Taiyouran’ Organic Egg served with Girolle mushroom, celery root, and parmesan foam; the Warm Scampi, balanced with puntarelle chicory flower shoots and scampi jus; and the Homemade Tagliolini, topped with luscious mushroom jus, butter, and parmesan cheese. The fourth dish is Bresse Poularde, paired with braised cabbage and cured pork cheek; and lastly comes the White Truffle Gelato for a sweet ending.
