A generous Seafood on Ice selection opens the afternoon with a sense of indulgence, featuring Freshly Shucked Oysters, Boston Lobster, Poached Tiger Prawns, Sea Whelk and Mussels. A refined Japanese offering of Norwegian Salmon and Tuna Sashimi follows, presenting flavours that are delicate, balanced and thoughtfully composed.
The experience gently unfolds into a vibrant medley of seasonal salads and artisanal cheeses, bringing a light and refreshing balance to the table. From Salmon Gravlax with Crème Fraîche to Charred Cauliflower with Pomegranate and Shoyu, offering simple pleasures presented with care.
At the centre of the table, the carving station presents Slow-Roasted Angus Beef with Provençal herbs and Madeira sauce, alongside Steamed Seabass in Spicy Sauerkraut Broth. Surrounding these are comforting favourites and familiar flavours, from Slow-Braised Beef Stew with Lemon and Parsley and Roasted Chicken with burnt butter shoyu, to beloved local creations such as Assam Pork Curry, Wok-Fried White Pepper Prawns and Pipa Duck with Truffle Sauce.
As the afternoon lingers, a thoughtfully composed dessert selection offers a sweet moment of indulgence. Highlights include Strawberry Cheesecake with Vanilla Chantilly, Raspberry Lychee Rose Cake, Eton Mess, Brown Sugar Lava Mochi, Traditional Nyonya pastries and Snow Pear & White Fungus Soup.
The Mother’s Day Buffet Brunch at Racines is only available on 9 and 10 May 2026, from 12:30pm to 3pm, at $138++ per adult, $69++ per child.
