
This May, Willow welcomes Chef Aidan Low of Akar, Kuala Lumpur – one of only a handful of restaurants to be newly awarded one Michelin star, and one of Malaysia’s most compelling voices in modern cuisine devoted to expressing the depth of Malaysian terroir through culinary craft.
At Akar –“root” in Malay – Chef Aidan draws deeply from his homeland, one of the world’s oldest rainforests. Working with native produce, wild herbs, and indigenous ingredients, he reveals a side of Malaysia still largely undiscovered.
At Willow, Chef Nicolas Tam brings quiet precision with playful flavour – an ingredient-driven philosophy shaped by Asian influences and refined through French technique.
