
Firebird by Suetomi introduces a new way to experience the counter: a dedicated Sake Pairing Night, held twice a month on the 2nd and 4th Tuesday.
Guests can settle in from 7PM to 9PM for a 9-course menu paired with 8 sakes, priced at $158++ per guest. With limited counter seats available each session, the evening is designed to be intimate, focused, and unhurried.
Built around Firebird’s tori-omakase sensibility, the experience also spotlights a quieter side of the restaurant: a sake programme shaped by thoughtful sourcing, including bottles that are, at times, exceptionally rare.
Curated in tandem by Sake Sommelier Jen Choo and Head Chef Alvin Leong, each course and pour is calibrated with intent, considering temperature, texture, and the way sake’s savoury depth can lift what’s on the plate.
