The techniques and menu are all inspired by the passionate fishermen, farmers, breeders, and providores of Australia. Produce here is wild-caught, and sustainably raised from the best local farms in Singapore. The centrepiece here is the wood grill and oven built by trained stonemason Samuel Fraraccio. It imparts an incredibly smokey flavour to dishes like the salt cured and smoked kangaroo, wood roasted wagyu, and cauliflower steak.
