This brand new dinner series, aptly named Apericena, will see an entire evening of fabulous food, specialty cocktails, and a six or eight-course wine-paired degustation menu cooked up by this culinary icon. But that’s not all. The evenings will begin early at sunset, to capture the candy-coloured skies reflecting over The Mulia’s iconic oceanfront infinity pool, The Oasis. It is here, beside one of Bali’s longest beachfront watering holes (and one of the most Instagrammed pools in the world) that sumptuous pre-dinner cocktails and gourmet canapés will be served to lucky guests, while the setting sun glitters over the horizon and a live DJ serenades the occasion with lively lounge tunes.
Once the sun has set and the constellations are twinkling, that’s when the award-winning degustation will begin – in the lavish and exclusive ambience of The Lounge. Contemporary international dishes will be presented course-after-course with technical perfection, drawing inspiration from the chef’s Italian heritage with culinary nods to the Mediterranean coastlines of the Rivieras, the Adriatic Sea and even the bountiful Greek islands.
With a focus on ocean-fresh ingredients, the seafood-heavy menu will be simple yet sublime, with delicate platings and yet bold, masterful flavours. And in true Chef Russo style, the presentations will be artistic and intricate, without being overly ostentatious nor underwhelming – the perfect balance of fine dining masterpieces with a relaxed and amusing undertone.
