Famed Michelin-starred chef Paul Pairet’s fever dream has created one of the must-visit dessert cafes in the city. It’s fun, sweet, playful – all the things that make for an ice cream paradise. A day out with the kids, a girls’ catch-up, or a casual date, as long as you’re in the mood for a sweet treat, it is the place to be. It’s best experienced after a hearty lunch at Moutarde restaurant (chef Paul’s other concept right next door!).

A technicoloured ice cream paradise

Similar to Moutarde Restaurant, I found out that Sundae Royale was something chef Paul Pairet had always wanted to do but could never find the space for. The ice cream concept started as a pop-up in Shanghai and has now found a home in Singapore.
The cafe has a retro diner feel, with booth seating and shiny vinyl chairs. I’m also a huge fan of the island in the middle with bar seating that makes for some adorable couple pictures if you get the chance to sit around it. There’s even outdoor seating if you feel like enjoying some sunshine.
If the diner’s interior isn’t enough to tempt you, the massive fryer at the door will! Who can resist the sight of churros freshly piped and fried, served with homemade ice cream? Once you catch sight of the other sundaes being prepared at the bar, you won’t wanna leave.
A world of flavours to try

Much like any ice cream place, Sundae Royale offers a multitude of flavours. But you won’t find basics like strawberry, vanilla, or cookies and cream. We’re talking caramel butter soy, lemon curd, and pistachio – something different and a little elevated from your usual ice cream experience.
Options like milk, chocolate, or peanut butter ice cream are good if you have kids who are opinionated about what they want. But for the adventurous eaters, I’d definitely go for the caramel butter soy. The silky caramel and salty soy flavours strike a balance in flavours that make you want to dive back for a second bite. As for the lemon curd, it hits you right in the nose with its acidity. It’s refreshing, but you’ll definitely be puckering because chef Paul isn’t afraid of embracing lemon’s sour flavour. I don’t recommend it if you’re looking for something on the sweeter side.
When I asked chef Paul about his favourite flavour, he said all of them. “Because I love everything I make,” he explains confidently. So if you’re looking for recommendations, I’d say take the gamble and try anything (and everything) on the menu.
For some added pizzazz, look to the simple sundae, sundae liegeois or sundae crunch options. The peanut butter and chocolate sundae is the best of both worlds, thanks to the peanut butter ice cream and chocolate sauce. And if you enjoy a bit of texture with your dessert, go for the milk & cereals sundae topped with cornflakes and Iranian pistachios.
Treats beyond the soft serve and sorbet

Don’t leave without trying chef Paul’s real French toast ($12). You’ll pay a pretty penny for a slice of bread, but it’s soft, buttery, and uber sweet – everything you need for perfect French toast. Top it off with a mini serving of ice cream, and you’ll be utterly satisfied.
I’ll also never turn down the churros ($6). While dusted in a bit too much cinnamon sugar for my liking, they were fried to perfection with an addictive crispy exterior. You’ve got the option to have it with a mini ice cream scoop or some hot chocolate. Either way, no complaints.
Other sweets include cheesecake ($12), a selection of viennoiserie (from $8), and the Polux waffle ($12), one of chef Paul’s highly sought-after desserts from his Shanghai cafe, Polux. It’s beloved for its crisp sugar glaze and soft exterior. I didn’t get a chance to try it, but you bet I’ll be back to order it for my next visit.
If dessert is your love language, your heart will burst with Sundae Royale’s selection of sweets. It’s charming, delicious, and will soothe your sweet tooth. Despite the seemingly simple offerings, I see Sundae Royale carving out a unique space for itself as a dessert cafe thanks to its innovation and heart.
