
To celebrate International Women’s Day, Timeless & Tasty, in collaboration with Table by Sandy Keung, will be hosting a meaningful whisky dinner for whisky lovers to gather together and support women’s empowerment with a perfect pairing of whisky and food. This year’s International Women’s Day theme is #AccelerateAction, and the dinner will feature an auction with a portion of the proceeds going to RainLily and HER Fund, two charities dedicated to supporting women and providing resources and assistance to local women. Timeless & Tasty is committed to accelerating action on gender equality through the dinner.
Hil, the founder of Timeless & Tasty and whisky expert, is an active supporter of women’s rights and often works with local female entrepreneurs. For this special dinner, Table founder and chef Sandy Keung has created a five-course menu, paired with five whiskies hand-picked by Hil to create a richly layered flavour experience for guests. Known for her innovative culinary style and ozone depuration techniques for shellfish, Sandy Keung’s unique presentation combines seasonal ingredients with the principles of traditional Chinese medicine and the 24 Solar Terms. The dishes are paired with different flavours of fine whisky, enhancing the flavours of the dishes and demonstrating the strength of a chef.
The menu highlights include a selection of whiskies, featuring an exclusive bottling of Secret Highland 20 Years to commemorate Timeless & Tasty’s 8th anniversary. Aged in PX sherry casks, this whisky offers a complex profile of peat smoke, salty sea breeze, smoked aged meats, and stewed tropical fruits, which harmonise exquisitely with the aromatic charred French beef onglet steak. For dessert, the dark chocolate sorbet with frozen black sesame rocks will be accompanied by Black Snake’s VAT 6 Third Venom, a special bottling exclusive to Hong Kong. The whisky’s spice and nutty flavours are expertly balanced with the dessert, adding delightful layers of taste.
To ensure a well-rounded dining experience, the menu also includes Brittany Scallop and Threadfin Fish Crudo in kelp infused coconut with soya-dashi gelee, followed by an exquisite combination of firefly squid, guanciale, braised pork belly and roquefort cheese foam. These dishes are carefully paired with complementary whiskies, enhancing the overall flavour profile and providing a balanced and memorable culinary journey.
