
Hailing from Broadway of Emirates Palace Mandarin Oriental Abu Dhabi, Chef George Lyon will grace Mandarin Oriental, Hong Kong on 9 to 12 April. He presents three exclusive menus: a three-course set lunch from 9 to 11 April, a five-course tasting menu from 9 to 12 April, and a dedicated vegetarian tasting menu available throughout the dinner period. Known for his sophisticated yet approachable cooking, Lyon brings a modern, ingredient-led sensibility to classic brasserie fare – balancing bold flavours, refined technique, and a commitment to seasonal, responsibly sourced produce.
Highlights include starters like XL Orkney Scallop with vadouvan and shellfish butter, Iberico Bellota Jamon with asparagus and crisp Burford Brown egg, and Heirloom Carrot with tarragon and Tête de Moine. Mains feature luxurious dishes such as Roasted Turbot with warm tartar sauce and potato terrine, Barbary Duck Breast with foie gras and confit leg, and Ravioli of Chanterelles with morels and aged parmesan foam. For dessert, guests can look forward to Lyon’s elegant takes on classic comfort sweets, including Tarte Tatin with Calvados and sour cream ice cream, and a Chocolate Tart with Jerusalem artichoke ice cream in the lunch menu.
The vegetarian tasting menu is equally indulgent, with standout dishes such as Beetroot Croustade, Shaved Cauliflower with spiced almonds and granola, and Jumbo Asparagus with brown butter hollandaise, culminating in the signature Tarte Tatin.
Having led Broadway to critical acclaim and a coveted spot in the Michelin Guide within just 10 months, Lyon also spearheaded the Michelin Food Festival in Abu Dhabi and has been featured in numerous international culinary publications.
