Originally opened in 1969 at the former Hyatt Regency Hong Kong, Hugo’s was reincarnated at Hyatt Regency Hong Kong, Tsim Sha Tsui in 2009, and is celebrating its golden anniversary along with the hotel’s tenth anniversary, by launching the Golden Classics Four-Course Set Dinner Menu, showcasing the most quintessential classics from over the years, including the old classic specialities only available for this anniversary celebration.
From old to current classics meticulously crafted by Executive Sous Chef Josef Gallenberger, guests can opt for specialities of their choice and experience Hugo’s 50-year journey of excellence. For starters, choose the old classic Baked Oyster Rockefeller with spinach, tarragon and parsley, or the Caesar Salad with romaine, crouton, parmesan, lemon, egg, olive oil and bacon, a current classic with Hugo’s iconic table-side service, tailor-made to guests’ own preferences.
Take a sip of Pigeon Consommé under the puff pastry dome, an old classic speciality with diced pigeon meat, celery root, carrot and sherry, which serves as a perfect palate cleanser prior to mains.
For mains, choose between the old classic Pheasant Souvarov, a whole pheasant marinated in cognac and foie gras truffle sauce, served table-side, or the current classic Whole Dover Sole Meuniere with brown butter, lemon and white wine. Select two side dishes ranging from mashed potatoes, French beans with shallot, green asparagus and mixed leaf salad.
Revel in a sweet indulgence from the signature Crêpes Suzette, flamed table-side with caramelised orange sauce, Grand Marnier and French vanilla ice cream, Bombe Alaska flamed table-side with French vanilla, chocolate, raspberry ice cream and meringue, or the old classic Hugo’s Chocolate Soufflé with Grand Marnier and chocolate-cognac sauce.
The Golden Classics Four-Course Set Dinner Menu is priced at HK $1,388 per person, available from 1 October to 30 November 2019. Enrich the dining experience with wine pairing for an additional HK$700 per person. All prices are subject to a 10% service charge.
