
The trio of Laca's legendary Jalapeño Margarita is all things spice and everything nice.
Did somebody say, Mega-Margarita? With Mexican bars being “so hot right now,” the humble margarita has been reinvented into countless variations the world over. But forget the sugared plums and lavender and don’t even talk to us about the orange salted caramel or kale. Wild ingredients need not make an appearance in our margaritas here. Not when a bit of spice on the old classic is sending us into fits of tequila-induced hysteria.
The best spicy margarita in Bali can be found at the trio of Lacas: Lacalaca Cantina Mexicana in Seminyak, Lacalita Bar y Cocina in Canggu and most recently, Lacasita Fonda Mexicana in Ubud. Many a Laca fan has been spotted performing solo renditions of El Jarabe Tapatio after one too many of these; legs kicking, body twirling, not a care in the world. We feel you. 100g jalapeños
750ml of 100% Agave [or good quality mixto Tequila]
15ml triple sec
15ml lime
15ml simple syrup
30 ml starfruit juice
1. Slice up the jalepenos and add to the Agave [or tequila]. Keep in a warm place, and stir daily for a minimum of 10 days.
2. From there. it’s back to margarita basics. Fill a shaker with ice and add 30ml of the infused tequila with the triple sec, lime, simple syrup and starfruit juice.
3. Shake like crazy for 15 seconds.
4. Empty the shaker complete with the ice and all the goodness into an Old Fashioned glass or tumbler.
5. Drink. Repeat.
