Hosted at some of the best restaurants in Singapore, these set meals and special dishes are just the tip of the iceberg of this annual food spectacle
Foodies like us can’t say nah to a sterling, prestigious gastronomy event like the World Gourmet Summit – after all we did give you five reasons to check it out. But aside from mod-Sin showdowns and pop-up Thai markets, the World Gourmet Summit is also a celebration of the blossoming food industry in Singapore, and its elite restaurants that make it up. Which ones should you check out, and what feasts will they be cooking up? We fill you in.
Salted & Hung
If you don’t find anything awful about offal, then this nose-to-tail restaurant should be right up your alley. Manned by Chef Drew Nocente – check out our interview with the meat maestro here – this restaurant along Purvis Street will dish out a set dinner in collaboration with New South Wales’ craft beer brewery, Stockade Brewing Co. From pairings of Westholme flank with hoppy lager, to wagyu bresaola with smoked jalapeno porter – these twin treats will win over both carnivores and hopheads.

Lokkee
If there’s one chain of Chinese restaurants that boasts a top-tier reputation, it’s the TungLok Group. One of its more contemporary establishments is Lokkee in Plaza Singapura, and it’s whipping up a special a la carte menu for a family feast to remember. Spice it up with a “Mala” Irish duck ($50++ whole, $26++ half), get your fatty pork fix with some bak kwa bacon salad ($21++), and we can’t even imagine the contrast in textures you’d expect from Lokkee’s cereal egg floss oysters ($19.80++)!

Tippling Club
Our love affair with this brainchild of Chef Ryan Clift – also the genius responsible for Open Farm Community and Open Door Policy – is no big secret, and it just scored more points with us this World Gourmet Summit. Its special menu this season promises an avant-garde banquet of dishes like Atlantic cod with kombu, artichoke, miso & yuzu emulsion and leek ash; and duck with hazelnut, purple carrot and dukka.

Odette
As one of our Hot 50 Tables, this establishment of Julien Royer was an easy pick for us. The modern French restaurant residing within National Gallery Singapore even clinched the #9 spot in Asia’s 50 Best Restaurants, also bagging the Highest New Entry Award. Convinced, aren’t you? Wait ’til you hear the menu: 55 smoked organic egg with smoked potato syphon, chorizo Iberico and buckwheat; Quercy lamb “retour d’ orient” with glazed eggplant, couscous and harissa; and Bounty Milefeuille with itakuja chocolate, coocny crumbs and lime; amongst others.

Morsels
Lying in the heart of Dempsey Hill – a secluded yet bustling area for weekend brunches – is this environmentally-conscious restaurant that even has its own edible garden. Chef Petrina Loh runs the show here, and is presenting a sharing food menu featuring Asian-fusion cuisine. Small plates here include seared Hokkaido scallop with shaved foie gras torchon, sustainable NZ monkfish with Brussels sprouts kimchi, and grilled Hungarian Mangalican pork ribeye with fermented blood orange salsa.
