Indulge in brand spanking new fusion plates of French-Singaporean flavours at Sofitel So Singapore's Xperience Restaurant

Sofitel So Singapore’s swish dining spot Xperience Restaurant (a superb lunch spot in our books if you’re in the CBD) has creatively fused both cuisines in its refreshed menu, and we are totally on board – just look at the gorgeous pictures!
Crafted by resident culinary designer chef Anne-Cecile Degenne, the new items boast contrasting flavours and vary greatly in terms of texture. Begin with starters like the pan-seared foie gras with beluga lentil and hazelnut – the richness of this delicate option is accentuated by the nutty flavours of the lentils and hazelnut. Are you big on truffle? Then the truffle pao with short ribs stuffing is perfect. Sink your teeth into steamed charcoal and truffle-infused buns, and relish in the glorious soft-pulled sous vide ribs filling.
For your mains, choose between the Cauliflower and Mushroom Texture and the grilled beef tenderloin, mushroom, asparagus, and condiments. The former consists of fresh cauliflower prepared three ways (puree, grilled, and fresh), as well as bunashimeiji mushrooms, dehydrated king oyster mushrooms, and Vietnamese rice paper dusted with mushroom salt – a mighty crowd pleaser even if you’re not a vegetarian. The grilled beef tenderloin, mushroom, asparagus, and condiments is a solid choice for meat lovers. Grilled to perfection, the Black Angus grass-fed steak sits atop a bed of asparagus and basil puree. Enjoy it with other components like sun-dried tomatoes and olive paste.
Finish your epicurean journey with a dessert worthy of the extra calories. The white chocolate and yuzu cremeux is a deconstructed delight. There’s a yuzu sorbet, which sits between white chocolate mousse and golden baked white chocolate tuille. What you get is a balance between the caramelised flavours of the baked white chocolate tuille and the tartness of the yuzu sorbet, with all other elements (raspberries, mint, white chocolate mousse) adding a whole new dimension to the already colourful creation.
