The negroni might be a classic cocktail that never goes out of style, but we’re always up for modern reinterpretations of the drink – especially when there are over a hundred renditions of the drink to try, mixed at some of the best bars in the city. Here are five re-imaginations of the drink we just can’t wait to get our hands on.
Fat Prince – Her Royal Highness
Bold, Middle Eastern-inspired cocktails are Fat Prince’s forte and Her Royal Highness, concocted by Loga Raj, is no exception. This exotic take on the negroni is built upon a base of The Botanist Gin, butterfly pea flower-infused Cocchi Americano, and a little heat with the addition of mace-infused campari.

Tippling Club – Sonic Negroni
Tippling Club’s Joe Schofield brings a little technological wizardry to the bar counter with his Sonic Negroni. The cocktail, while essentially a classic negroni, gains a subtle complexity through “sonic aging” – a process which imparts a year’s worth of barrel aging in a matter of hours.

Bread Street Kitchen – Soft Serve Negroni
Perhaps Negroni Week’s most unorthodox rendition of the classic cocktail is Bread Street Kitchen’s soft serve negroni. With a little molecular mixology magic (no doubt gleaned from the restaurant’s culinary know-how), the bartenders at Gordon Ramsay’s flagship restaurant have re-imagined the classic cocktail in a soft-serve dessert format.

The Library – Candy Negroni
“But it’s bitter!” is the response I often get after offering a sip of my negroni to uninitiated drinkers. If you’re after the bitter complexity of a negroni, but have a bit of a sweet tooth, you’ll want to try The Library’s Candy Negroni. The drink features campari, candy-infused gin, pineapple vermouth, and a garnish of candy floss for a dash of colour and sweetness.

Bitters & Love – Bitters Breakfast
A negroni for breakfast? Why not? Bitters & Love’s Stephy Lim takes the aperitif a whole new direction with her Bitters Breakfast – Campari, Earl Grey-infused The Botanist Gin, and grapefruit and marmalade-infused Cinzano 1757 Rosso Vermouth.
