We know. Nobody actually likes plum pudding but tradition dictates you have to eat it on Christmas Day (unless there’s something better on offer like Pavlova)! Here’s a new spin on the old classic that’s quick and easy to whip up, and not quite as heavy.
Ingredients
(Serves 4-6)
250g plain white flour
200g brown sugar
200g mixed dried fruit
150g butter
200g finely shredded carrots
100g grated potato
1.5 tbsp baking powder
1 pinch salt (not pictured)
Method
- Prepare ingredients
- Combine in a large bowl
- Cover the bowl with tinfoil
- Prepare to steam – place an upturned saucer on the base of a large pot, and the covered bowl atop this
- Pour enough water into the pot till it reaches halfway up the side of the bowl
- Cover the pot with its lid and turn the gas on high till water starts boiling
- Reduce heat such that the water continues on a low boil for 3.5 hours
- Check every 30 minutes or so and top up the water so that it doesn’t boil dry
- When it’s done, serve on plate and garnish with icing sugar, pine cone or some Christmas holly
