Since its star-studded arrival, the Michelin Guide’s debut in Singapore has been the talk of the town. And we’re glad to see many of our favourites make the list, both hawkers and high-end dining establishments. But, if all the hubbub’s got you scratching your heads, perhaps it’s best to see for yourself what the fuss is all about. So get to it; here’re 10 Michelin star restaurants that you can beat the long queues and waiting times with when you make a reservation via Chope.
Shisen Hanten
The Shisen Hanten brand grew to international fame under the watchful eyes of founder, Chen Kenmin, regarded as Japan’s “Father of Szechuan Cuisine”. The Singaporean branch, helmed by his son, Chen Kentaro, is the restaurant’s debut outside Japan. And the menu showcases bold flavours characteristic of the cuisine, most apparent in star dishes like Stewed Fish Fillet in Super-spicy Szechuan Pepper Sauce, as well as more contemporary creations like the Foie Gras Chawanmushi with Crab Roe Soup.

Shoukouwa Restaurant
Shoukouwa is a bona fide Michelin experience (two stars at that!). The diminutive restaurant – run by the Emmanuel Stroobant Group – seats just eight people at the counter and features an omakase menu that highlights only the freshest seasonal ingredients. You’ll find all the classics here, from sashimi and nigiri sushi to Japanese-style omelettes and a selection of cooked dishes.

Corner House
Tucked away in the lush greenery of the Botanic Gardens is this culinary tribute to EJH Corner (the man largely responsible for Singapore’s “Green City” status). The resto serves up French-inspired dishes inventively described by local chef, Jason Tan, as “Gastro-Botanica” – featuring gastronomical delights like Hungarian Mangalica Pork and Patagonian Toothfish.

Ginza Sushi Ichi
Get an education on traditional Edomae style sushi at this exemplar of Japanese culinary traditions. The menu highlights a seasonal variety of nigiri dishes that can be sampled in various omakase and set lunch or dinner offerings. We can’t forget about the décor too though – the restaurant features warm furnishings as well as a countertop made from a 300-year-old cypress tree.

Terra
This relative newcomer to Singapore’s dining scene, helmed by Chef Seita Nakahara, represents the culmination of the chef’s yearlong culinary sabbatical through Tokyo and Italy. Terra’s blend of culinary influences is most apparent in unorthodox creations like Spaghetti with Urchin, Yuzu and Bottarga, as well as Scallop Gratin served with Mushroom Herbal Butter.

Crystal Jade Golden Palace
This doyenne of Chinese cuisine in Singapore takes a particular shine to Teochew dishes like Cold Crab and Sugar-coated Yam. But if your tastes sway towards more contemporary dishes, this branch of Crystal Jade also offers unconventional plates like the Prawn served with both Blueberry Mayonnaise Sauce and Light Curry Sauce.

Alma By Juan Amador
Sample the enigmatic creations of three Michelin starred chef Juan Amador at this swish resto in Goodwood Park Hotel. Some of his more eccentric offerings include Pigeon with Mango and Purple Curry, Crispy Tofu with Langoustine, and Foie Gras and Winter Truffle.

Forest
Local celebrity chef, Sam Leong, gives Chinese cuisine the contemporary treatment at Forest. Expect the unconventional in appetisers like Pan-seared Foie Gras in Red Wine Sauce, as well as Alaskan king crab meat served playfully in a cone. Main courses like Steamed Cod in Black Bean Sauce and Charcoal-grilled Kurobuta Pork in Hoisin sauce are specialties not to be missed.

Summer Pavilion
Summer Pavilion’s artfully plated dishes are set to stun even the most discerning connoisseur of Cantonese cuisine. Savour delicacies like Poached Rice with Lobster Meat, and Barbecued Iberico Pork with Honey Sauce. End things on a sweet note with traditional desserts like the Sweetened Almond Tea with Snow Lotus.

The Song of India
This Indian gem will have you singing praises with its stellar lineup of North Indian dishes. Enjoy exemplars of Indian cuisine like the Nalli Gosht (spiced lamb shanks) and Lahsoona Jhinga (stuffed prawns in tandoor marinade), all in the lavish confines of a classic black and white heritage bungalow.
