Following Butcher’s Block’s recent participation in ‘Rumari and Friends’, a gastronomic dining series hosted by Raffles Bali, the restaurant and Chef de Cuisine Jordan Keao now invites Guest Chef Gaetan Biesuz, Culinary Director of Raffles Bali through their doors with the warmth of ohana – ‘family’ in Hawai’ian – for a four-hands dinner on 10 and 11 May 2024. During these two exclusive evenings, the creative minds of Chefs Jordan and Gaetan meet at culinary crossroads where distinct, yet familiar flavour profiles and techniques intersect; inexplicably connecting the personal culinary styles of both talents to jointly present a harmonious tasting menu.
At Butcher’s Block, the art of butchery and mastery of contemporary wood-fire cooking draw on the heritage of Chef Jordan’s homeland – Hawai’i, where a melting pot of cultures, rich in its history of migration, weaves a tapestry of influences from different ethnicities. Ingrained with the philosophies of whole animal utilisation and zero-waste, coupled with careful sourcing and a farm-to-table approach, Chef Jordan lives the Hawai’ian way of life rooted in the native thoughts of Aloha ʻĀina, meaning ‘love of the land’, and Mālama ʻĀina – ‘to care for the land’, as the earliest forms of sustainability.
Sharing similar values with locavore sensibilities is Chef Gaetan. Interpreting authentic bold Southeast Asian flavours in refined contemporary creations, Rumari at Raffles Bali adheres to the 80/20 rule, meticulously sourcing 80% of its ingredients from local farmers and producers in the archipelago, while the remaining 20% are imported by necessity.
The 7-course dinner tasting menu is priced at $238++ per guest with the option of a 5-glass tailored wine pairing at $168++ per guest.
