Sylvain’s vinification philosophy is natural, natural, natural.
Some of the keys of his success, include his organic and biodynamic-inspired work in the vineyard, natural vinification and perfectly mastered élevage. Accordingly, there are no chemical herbicides, pesticides, or fertilizers; only natural yeasts, no enzymes, are used. Everything as simple as possible.
