If you haven’t been to Antidote (it’s only one of the best bars in Singapore), the amazing new exotic cocktail and tapas menu should trigger your FOMO.
From smashing cocktails and a cracking tapas menu, to uber-stylish interiors worth a post or two on Instagram, Antidote at Fairmont Singapore has got it all. Now that it’s introduced spanking new food and drinks offerings, we’ve all got yet another reason to love (and revisit) this swanky hotel bar.
Cocktail o’clock!
Drawing inspiration from her childhood, Head Craftsman Bannie Kang has created three signature cocktails, including the Taproot Sangaree – a spicy, citrusy concoction made with white wine and homemade beetroot wine. If you’re up for a tropical-inspired cocktail, the white rum-based Lord Kane, with salted pineapple and lavender coconut syrup is a must. There’s also the tasty Atlantis Lea: a green, vegan-friendly option that blends tequila with cucumber, lime juice, and a magic foamy, creamy ingredient called aquafaba (aka canned chickpea liquid).
Other must-trys are Stay Humble, a refreshing mix of jackfruit shrub with sage, soda, and pisco, as well as Philoso’Me. A savoury, smoky rendition of the ever-classic Negroni, this drink features dark rum and sherry with mezcal, herbal Campari, and a little muscovado.
Got the entire squad with you? We say go for punches like the Out-of-Towner, which has Sailor Jerry spiced rum with pea flower, violet liqueur, lemon juice, and white tea, and is good for a group of four to eight.
Crazy-good tapas coming your way
What’s a night of amazing cocktails without damn good food? Pair your drinks with creations by Head Chef Tryson Quek, who’s refreshed the menu with modern Asian-influenced tapas. Order highlights from the sea like the platter of oysters with pickled seaweed and burnt butter caviar, or the Hokkaido scallop tartare with sea urchin, caviar, and whisky-smoked lime ponzu.
If you have room, the vegetarian option of beetroot and edamame with burrata and manuka honey is also worth trying. Don’t forget about dessert! Favourites like the messy chocolate cake and petit fours haven’t gone anywhere and are still available.
