There is nothing like the small tasty plates of tapas, and one of our favourite places in town is the funky BOMBA restaurant at Martin No. 38 (you might remember our big night out at BOMBA earlier in the year?).
This well-loved Spanish go-to resto serves the most authentic and rustic flavours in a bold, funky interior – big wraps for the heroine graffiti wall mural and vibrant red crates.
Helming the kitchens of BOMBA is none other than Chef Jean-Philippe Patruno, who kicked off his career at 3-Michelin star Chez Nico on Park Lane, before heading Nico Central and Simply Nico. He later started tapas restaurant, Fino, which opened to rave reviews, headed Barrafina Spanish Tapas Restaurant and Bar in London (a total institution), and headed Quo Vadis restaurant in London, named as one of the top 100 UK restaurants in 2012.
At the heart of BOMBA is its specialty authentic paella – Chef Patruno uses Bomba rice, the most prestigious pedigree amongst the Spanish rice varieties, and flavourful stock to give character to the paella. Diners can also look forward to la plancha cuisine at BOMBA, where it’s all about great marination and flavours, and other great tapas.
Come down and enjoy a last supper with Bomba, Spanish style, before it says “hasta la vista Singapore” on 11 January.
