For one night only, Indus welcomes Joe Napol, the chef behind Bangkok cult favourite Samlor, to cook above the Ubud valley as part of Ubud Food Festival 2026.
Joe has built a devoted following in Bangkok for his bold, deeply personal approach to Thai cooking. This special evening brings that spirit to Indus in a dinner that is not to be missed.
Starter: Trio of Thai Cold Seafood featuring Thai Style Prawn Ceviche, Toasted Rice Crusted Ahi Tuna Crudo, and Lightly Poached Squid.
Main: Nasi Campur Bangkok with Krapow Slow-cooked Pork Belly, Coconut Batter Fried Fish, Thai Style Sambal Embe, Yum Wing Bean Salad, Pork Cracklings and Pickled Seasonal Fruit.
Dessert: Caramelized Palm Sugar with Ice Cream, Coconut Mochi and Fried Shallots.
