Well, here’s some fantastic news: Oscar’s has upped the ante with a re-charged version of their popular brunch buffet. In addition to the well-loved seafood spread, live cooking stations, four-metre-long salad bar, charcuterie and cheese counters, they’re now also serving up hot-off-the-grill lobsters and beef, eggs with a fancy twist, carved roasts and craft gin and tonics.

Slice into sizzling meats and seafood
Head out to Oscar’s new outdoor charcoal barbecue and pile up your plates with premium beef and tasty grilled lobsters. While you’re at it, scoop up the homemade sauces to complete your barbecue feast – choose from the rich blue cheese and cognac, thyme veal jus, habanero tomatillo, or go light with the Asian coconut dip.
Load up on perfectly poached eggs
With a name like “Eggs with Attitude”, you know that Oscar’s new live organic egg station is certainly not serving up plain old poached eggs (yawn!). Here, you’ll get to munch on eggs on English muffins that are topped with indulgent ingredients such as lemon-myrtle salmon, foie gras parcels, pancetta, pulled braised brisket and mullet Bottarga. Then, drizzle on your choice of homemade sauce, including tarragon mustard, truffle-mushroom Manuka honey, homemade guacamole, and for all you eggs Benedict lovers – hollandaise.
Feast on carved roasts
Up for more hearty picks? Drop by the new carving station and dig into Oscar’s rendition of London-style roast duck. Using specially imported, high-quality Irish ducks, the result is flavourful meat that’s crispy on the outside and succulent on the inside. Next up is the lechon de leche – a scrumptious Spanish suckling pig, slow-roasted Filipino style. Then, grab a few servings of the oven-roasted US prime rib to round everything up!
Sip on a liquid nitrogen gin sorbet
For those who are opting for a boozy brunch (at an additional $30++ for free-flow of sparkling wine, house red and white wines and draft beer, or $70++ for free-flow of Champagne, premium red and white wines and Hitachino Nest beers). Make your way to Oscar’s new craft gin and tonic bar, besides the craft gin concoctions, you’ll get to try the exquisite liquid nitrogen gin sorbet. Watch as the resident mixologist works his magic by using liquid nitrogen to turn the cocktail into a unique frozen dessert. We’ll toast to that!
