Walk inside their doors on Jalan Kerobokan and you’ll be surprised at the chic indoor lounge and a large alfresco dining area that opens up in front of you. And trust us, you won’t be leaving any time soon.
As its name proudly suggests, this newly-opened masterpiece offers an extensive food menu rich in history and in flavour, combining home-style dishes, street-side favorites and traditional selections passed down through the generations. In a beautiful and luxe, alfresco setting.
It’s slightly ironic that, of all the incredible restaurants on offer in Bali, Indonesian cuisine hasn’t stolen the dining show yet so we love that Republik is poised to change that. Food is prepared with authentic characteristics and origins, offering a true interpretation of dishes from all parts of Indonesia’s archipelago.
You’re more than spoilt for food choice here, with the menu created by Balinese head chef Ketut Udiana – who trained with Mozaic’s chef Chris Salans for many years – and his team. Choose from a seven course set menu showcasing the flavours and typical dishes of particular regions across Indonesia, or select shared or individual dishes from the also extensive a la carte menu.
For example, you could start with Sambal Tapa – shredded tuna and young mango intoxicatingly blended with a sprinkle of chili, wrapped in lightly pickled cucumber slices to get the taste buds in gear. Move on through too many choices with dishes such as Buntut Bakar Sambal Kemangi – an uplifting take on Javanese street food, with (grilled to perfection) oxtail smothered in honey, tomato and chilli chutney, with a touch of the traditional lemon basil Kemangi.
The two story high dining and lounge area feels like you’re at a friends luxe mansion, impeccably styled, with room for 100 of your closest friends obviously. Live acoustic music from acts such as Lydia Rose and Phil Stoodly (Monday, Wednesday and Thursdays) also help makes the large bar and dining space feel intimate and oh-so-comfortable. So we guarantee you’ll pull up a pew for a drink or two, either side of your feast.
And more good news? They’re now open for lunch! Choose a Premier Set of two courses for only IDR 115,000 or a Delux Set with three courses for only IDR 155,000. But don’t fret if you don’t get out of bed before 3pm, you can now also pop in then for their Indonesian High Tea.
