
On Friday, 27 March, Mama San will welcome Flavours of BAN into its kitchen for a one-night collaboration under Nom Nom, a platform created to connect chefs, ideas, and the cultures that shape them. This edition is straightforward in its intent: Bangkok meets Southeast Asian street food.
Flavours of BAN, the Canggu-based Modern Thai kitchen led by Chef Reinaldo and Steffie, has built its identity around charcoal and familiarity. Drawing from Bangkok’s street grills and dining rooms, their cooking respects Thai flavour without imitation, balancing heat, acidity, sweetness and depth with clarity.
Alongside BAN’s plates, Chef Will Meyrick responds from his own lens, shaped by decades immersed in Southeast Asian street food culture. His dishes will layer technique, heat and restraint in conversation with the Thai table. This is not fusion, it is dialogue behind the pass.
Guests are welcome to choose the Feed Me menu, curated to experience the collaboration in full, or select from a limited à la carte offering. Not every dish from Feed Me will appear individually as the menu is designed to unfold in sequence.
From 7PM onwards, the tempo shifts. The DJ takes over. Dinner moves into late rhythm.
