This July, Da Maria welcomes back the man who helped shape its very first dough. Naples-born, fourth-generation pizzaiolo Luca Di Napoli returns to Bali for one unforgettable night, bringing with him the soul of Southern Italy and a menu that celebrates the flavours of his hometown.
Luca opened Da Maria nearly a decade ago, training the original kitchen crew, refining the recipe that built our reputation, and laying the foundations of our signature Italian style. His legacy runs through every pizza, and now, for One Night in Napoli, he steps back behind the pass.
In collaboration with Da Maria Executive Chef Lorenzo De Petris and Pizzaiolo Marcos Bonotto, Luca will present a bold à la carte menu designed to take guests on a culinary trip to Napoli, no passport needed.
The menu features traditional Neapolitan Italian dishes deeply rooted in Luca’s upbringing, including Pasta Alla Nerano, made-in-house spaghettoni tossed with fried zucchini, garlic, basil, black pepper, provolone and parmigiano reggiano, the Montanara, a golden fried dough base topped with tomato sauce, basil and mozzarella then finished in the wood fired oven, and a delicate Fish of the Day Cartoccio, market fish fillet baked in paper with roasted capsicum, white wine, lemon and basil. Except a soulful, flavour-packed expression of Napoli from start to finish.
“Bali holds a special place in my heart. I helped open Da Maria in 2018 and now I’m back, cooking with old friends like Lorenzo, Marcos and Federico. This menu is personal, rooted in my Neapolitan upbringing, my family and the food I’ve grown up making. I’m a pizzaiolo first, but everything I cook comes from love and tradition.
