Farmers breed older animals to create more complex flavours, allowing the Australian cattle to graze on pastures for at least five years, resulting in remarkable, well-muscled texture.<\/p>\n<p>While Argentinian beef is the star, there are also other premium cuts curated from grass-fed beef imported from Australia, New Zealand, USA and Japan. The meats are dry-aged for 35 to 38 days using a traditional method, with an added coating of beef tallow that introduces new flavour dimensions. At the wood and charcoal grill, each cut of beef is cooked with traditional Asado grilling techniques over a combination of cherry, apple and jarrah woods. The result?
