If only to relish the <a href=\"https:\/\/thehoneycombers.com\/singapore\/japanese-restaurants-in-singapore-where-to-go-for-the-best-sushi-sashimi-ramen-and-more\/\" target=\"_blank\" rel=\"noopener nofollow\">Japanese<\/a> yakitori cuisine, bask in its <a href=\"https:\/\/thehoneycombers.com\/singapore\/guide-to-jalan-besar-singapore-the-best-cafes-restaurants-and-hangout-spots-in-the-hip-neighbourhood\/\" target=\"_blank\" rel=\"noopener nofollow\">oh-so-hip<\/a> <a href=\"https:\/\/thehoneycombers.com\/singapore\/home-decor-ideas-5-handy-feng-shui-tips-to-bring-good-luck-for-chinese-new-year\/#rupJqgePJSo8purq.97\" target=\"_blank\" rel=\"noopener nofollow\">interior design<\/a>, and locate its tricky <a href=\"https:\/\/thehoneycombers.com\/singapore\/hidden-bars-in-singapore-secret-drinking-dens-and-speakeasies-in-the-city-that-are-hard-to-find\/#p3kXlQZrsYJsoDvH.97\" target=\"_blank\" rel=\"noopener nofollow\">secret entrance<\/a> (we\u2019ll get to that in a bit!), we were eager to dig into one of Singapore\u2019s must-try (<a href=\"https:\/\/thehoneycombers.com\/singapore\/hot-new-tables-february-2016-new-restaurants-in-singapore\/#MKRK6weAm6cjaeYC.97\" target=\"_blank\" rel=\"noopener nofollow\">die-die-must try<\/a>, as they say) restos.<\/p>\n<p><!--more--><\/p>\n<p>By day, this restaurant is actually a traditional mee pok stall \u2013 so the ambience in the main room exudes an old-school Singaporean vibe \u2013 a reflection of its Tiong Bahru shophouse surroundings. But at night, the front doors close, and you enter the restaurant through the back entrance \u2013 which was a bit of a hassle to find! Once you&#8217;ve stepped inside, however, you enter a very hip brass-plated bar, serving trendy Japanese-influenced cocktails. How\u2019s that for a surprise?<\/p>\n<p>After navigating past a very low ceiling, you enter a yakitori room \u2013 where the chefs show off skewer skills in front of a marble-topped counter table. Moving further in, you\u2019ll find the vintage <em>kopitiam<\/em>-style dining room; the interior style and vibe is on-point \u2013 everything you would expect from the people behind Esquina, Burnt Ends and Pollen.<\/p>\n<p>Prepared yakitori-style, the menu at Bincho is inspired by the traditional small grilling stalls in Japan. We were a group of four, and on the wait staff\u2019s recommendation, we ordered several set menus (including sets for two; perfect for dates) so that we could try everything. On hindsight, we would\u2019ve just ordered a la carte next time. We found it very mismatched to have so many small portions \u2013 from different menus \u2013 arriving at different times. It just lacked flow, and it was rather confusing and distracting.<\/p>\n<p>Poor pacing aside, the nosh didn\u2019t disappoint. Our favourite dish was the deep fried pig\u2019s ear (I know it sounds gross, but it was de-licious!), which, funnily enough, wasn\u2019t on any of the set menus, but something on the a la carte selection that we simply couldn\u2019t resist from ordering.<\/p>\n<p>Overall, Bincho is a really interesting dining experience, and clearly a must-try establishment of Tiong Bahru. We especially love how the 70-year-old <em>kopitiam<\/em> still serves its traditional mee pok during the day, and \u2013 kudos to great interior design \u2013 transforms into a very hip dining spot at night.
