In an early report on <em>The New York Times<\/em>, Bourdain says that \u201cthe beating heart and soul\u201d of the project will be a Singapore-style <a href=\"https:\/\/thehoneycombers.com\/singapore\/hawker-centres-in-singapore-our-favourite-spots-for-cheap-local-food-in-the-city\/\" target=\"_blank\" rel=\"noopener nofollow\">hawker market<\/a>. But this hardly raises any eyebrows, given Bourdain\u2019s public declaration of love for our local food. What\u2019s revolutionary though \u2013 well, in my mind and in New York at least \u2013 is his plan to bring local mom-and-pop businesses into the megamarket, rather than having big-name chefs whip up their versions of Asian street foods. And if his recent wishlist of dream dishes is anything to go by (four out of 10 come from our sunny island; see images below), it looks like our famous local food like Hainanese chicken rice is about to become very big.<\/p>\n<p>Why does it matter? Because Singapore\u2019s precious hawker culture is in danger of dying out and going extinct. We\u2019ve been talking about this for years now, and, thankfully, there have been noticeable efforts from the government, industry and individuals to preserve our hawker heritage. <a href=\"https:\/\/thehoneycombers.com\/singapore\/hawker-centres-in-singapore-the-most-unique-and-exotic-food-stalls-youd-never-expect-to-find\/#hE2uVZtGpMcultfw.97\" target=\"_blank\" rel=\"noopener nofollow\">Bright young things are setting up interesting stalls in hawker centres<\/a>, and <a href=\"https:\/\/thehoneycombers.com\/singapore\/local-food-in-singapore-545-whampoa-prawn-noodles-li-ruifang-on-where-to-go-for-the-best-local-dishes-in-the-city\/\" target=\"_blank\" rel=\"noopener nofollow\">some amongst them took over their family\u2019s businesses<\/a>. <a href=\"https:\/\/www.straitstimes.com\/singapore\/singapore-budget-2015-10-more-hawker-centres-to-be-built-by-2027\" target=\"_blank\" rel=\"noopener nofollow\">The Government announced early last year that there\u2019ll be 20 more hawker centres in the next 12 years<\/a>, and their <a href=\"https:\/\/www.wda.gov.sg\/content\/wdawebsite\/L209-001About-Us\/L219-PressReleases\/21_Oct_2013.html\" target=\"_blank\" rel=\"noopener nofollow\">Hawker Master Trainer Programme<\/a> shows no signs of slowing down. Thing is, sadly, there\u2019s still a gap: longstanding hawkers are closing down faster than new ones cropping up. And while people\u2019s preconceptions on the hawker trade are shifting (albeit slowly), running a small food stall in Singapore is still perceived as an unglamorous career move for most millennials.<\/p>\n<p>But Bourdain\u2019s Market\u2019s inclusion of real Singaporean businesses like Geylang Claypot Rice (<a href=\"https:\/\/www.straitstimes.com\/lifestyle\/food\/4-singaporean-dishes-make-anthony-bourdains-wishlist-for-his-new-street-food-hall-in\" target=\"_blank\" rel=\"noopener nofollow\">Straits Times confirmed a deal had been struck<\/a>) might just be <em>the <\/em>thing that our local hawker culture needs to beat the odds. New York is one of the world\u2019s greatest food cities, and for us to make our way across the pond and making a mark on the global culinary landscape is a huge deal. Being a hawker is lowly?
