Meet Soft Order, a hot new spot in Bukit Merah that has been making waves all over Singapore\u2019s TikTok and Instagram scenes. One look at the images, and the space instantly stands out with its sleek, industrial design that contrasts with the usual mellow cafe aesthetics. But, this cafe subverts all expectations with its industrial-chic style and brutalist architecture.<\/p>\n<p>The sleek interiors are characterised by raw, structural elements, as well as textural materials like stone, wood and metal. Yet, it still maintains a chic edge that feels modern and polished. Photography: Yuki Ling<\/figcaption><\/figure>\n<p>The moment you step inside, you\u2019ll be greeted by the fresh bakes selection from the in-house bakery. Unfortunately I came a tad too late on my visit \u2013 2pm on a Friday, for reference. The much-raved-about shio pan (Japanese salt bread) was all gone. I later found out that the cafe only bakes one batch of bread daily at 11am during the soft opening phase. Fingers crossed that more bread batches will be available once they officially open!<\/p>\n<p>Lucky for me, the homemade sourdough and butter (from $6 for two sourdough pieces and one butter choice) were still available. Give me a tub of them, and I can probably polish off a sourdough loaf all by myself.<\/p>\n<p>If you need recommendations, I\u2019d go with the classic garlic butter that can do no wrong, and the spicy dashi for added umaminess and heat. I also had no complaints about the sourdough, which was chewy with a crisp crust.<\/p>\n<h2><span class=\"ez-toc-section\" id=\"asian-fusion-brunch-and-dinner-plates\"><\/span>Asian fusion brunch and dinner plates<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>Still hungry for more? The day-to-night food menu will fill you right up. I usually temper my expectations for starters \u2013 I mean, how good can Brussels sprouts and fried chicken be? Photography: Yuki Ling<\/figcaption><\/figure>\n<p>The crispy Brussels sprouts ($17.80) was a flavour explosion with crispy bacon, tobiko, pickled guava, and a savoury homemade sauce. If you\u2019ve been deterred by bitter-tasting Brussels sprouts, this version won\u2019t disappoint.<\/p>\n<p>Another pleasant surprise was the So TFC ($14.90), featuring fried chicken bites coated in truffle seasoning and served with a homemade Thai chilli sauce. Photography: Yuki Ling<\/figcaption><\/figure>\n<p>For mains, I went meat-free with the Pea Bonara ($16.90) and pesto risotto ($19.60). The former is a must-try for udon lovers. The udon noodles had a firm, bouncy bite, and came tossed in a slightly sweetened pea carbonara sauce.<\/p>\n<p>Meanwhile, the pesto risotto was creamy, rich and herbaceous. The luscious slabs of butter add richness to the steak for extra indulgence. Photography: Yuki Ling<\/figcaption><\/figure>\n<p>Of course, I couldn\u2019t leave without trying the drinks. Skip the safe selection of lattes and mochas, and go for the ice-blended Frappe series. I tried the daizu houjicha frappe ($10.50), featuring strong roasted hojicha aroma and nuttiness from the addition of soy milk. The black sesame flavour got slightly lost in the mix, and I wished it was more pronounced.<\/p>\n<p>The cafe also has a creative line-up of drinks topped with cloud foam.
