Taking over the space left behind by Prive, the 100-seater concept is backed by the team behind Duomo Ristorante, its Italian neighbour. With colourful indoor seats and outdoor tables illuminated by twinkling lights after sunset, Sabor offers a lively, communal-style dining experience with a focus on classic tapas. I snagged a table before the official opening and enjoyed traditional Spanish dishes to the tune of vibrant music and a side of riveting conversation.<\/p>\n<div id=\"ez-toc-container\" With its bright red outdoor chairs surrounded by verdant foliage, the alfresco terrace is made for lounging till late under the gleam of lights hanging from towering trees.<\/p>\n<p>Stepping in, the vibe changes and turns moody, as colourful interiors welcome you for spirited conversations over cocktails. With happy hour deals going on all week from 4.30pm to 6.30pm, there\u2019s plenty to celebrate. Photography: Benita Lee<\/figcaption><\/figure>\n<p>With the spotlight on classic Spanish tapas and traditionally executed dishes with bold flavours, the menu is curated by Valencian-born chef-consultant Javier Vicente Rejas, who previously spent time at FOC Restaurant. Not one for sun and sweat &#8211; though I\u2019m told the lunch crowd from nearby offices descends upon Chijmes &#8211; I popped by in the evening to unwind through a leisurely dinner complemented by buzzy background tunes and chatter.<\/p>\n<p>To start, the simple bread and tomatoes ($12) offered a nice, golden crunch, with a tinge of acidity. You can\u2019t go wrong with croquettes, and I enjoyed sinking my teeth into the locally-influenced spicy crab version ($4 each). But the bikini sobrasada sandwiching cheese and slathered in honey ($18) got my attention for its lovely balance of sweet and salty notes. Cheese and bread? Photography: Benita Lee<\/figcaption><\/figure>\n<p>For more tapas options, the chicken wings \u2018dirty pepe\u2019 ($18) are a solid choice of flavourful, juicy protein. Meanwhile, the potatoes \u2018bravisimas\u2019 ($16) is another dish I\u2019ll never turn down, because those deep-fried chunks dipped in a spicy, creamy sauce just scream \u2018comfort food\u2019. However, the calcots tempura served with romesco sauce ($16) hit the salty side of the spectrum, even though the spring onions were sweet and the batter was light and crisp.<\/p>\n<p>One of my favourites of the night came from the charcoal grill section of the menu: the barramundi ($34), starring tender fish slabs with a bright red pepper sauce. As for the paellas, which require about 25 minutes to cook, my pork and scallop option ($36) leaned towards the blander side of things. The thin, crispy churros with chocolate ($12) are a fail-safe, while the crema catalana with cookies ($14) offered rich, creamy notes with each bite.
