After all, it\u2019s founded by storied Japanese chef Hiroyuki Sato, who previously took the helm at Michelin-starred Sushi Tokami. Chef Sato later introduced his restaurant concepts Hakkoku and Sushidan to Tokyo, which have both carved their names in the Edomae-style sushi scene.<\/p>\n<p>For the uninitiated, think of Edomae-style sushi as a pure, traditional form that dates back to Japan\u2019s Edo period over 200 years ago. The fish is never served raw, but instead cured, marinated or simmered to preserve and enhance its flavours. Let\u2019s just say his nimble artistry was so quick that my camera could barely keep up!<\/p>\n<h2><span class=\"ez-toc-section\" id=\"leave-it-all-up-to-the-experts\"><\/span>Leave it all up to the experts<span class=\"ez-toc-section-end\"><\/span><\/h2>\n<p>With prices as affordable as $19.90 per omakase set, it\u2019s easy to draw sceptics \u2013 and I\u2019ll admit I was one of them. I went with the slightly more premium omakase set at $29.90, which includes six pieces of sushi, a handroll, chawanmushi, miso soup, and three mini-dons.<\/p>\n<p>Kicking things off on a strong note was the first course, chawanmushi. The egg custard was silky and smooth, elevated by a robust, umami-rich seafood flavour. Unsurprisingly so, as the seafood is freshly sourced directly from Toyosu Market and salmon air-flown daily from Norway. Coupled with the renowned red shari \u2013 prepared with a Kyoto and Tokyo Akazu blend and premium rice from Akita Prefecture \u2013 it\u2019s a recipe set up for success.<\/p>\n<p>My standouts? The engawa with a luxurious, melt-in-the-mouth texture, and the akami for its intense meatiness. I was pretty stuffed at this point, but couldn\u2019t resist the indulgent seafood.<\/p>\n<p>If I had to pick a bone with this omakase experience, I\u2019d have liked a dessert to properly round off the meal.
