Next, the kegani (horse hair crab) and murasaki uni starter with chilled white asparagus, asparagus sorbet, and tosazu jelly offered an impeccable first bite.<\/p>\n<p>Sashimi-wise, the suzuki (sea bass) gets a drizzle of gyokuro-infused sesame oil that adds a savoury depth, while the hon maguro (bluefin tuna) is steeped in Guo Mu oolong-spiked shoyu.
