{"id":18388,"date":"2014-02-02T12:18:52","date_gmt":"2014-02-02T04:18:52","guid":{"rendered":"http:\/\/www.thehoneycombers.com\/singapore\/?p=18388"},"modified":"2014-02-02T12:18:52","modified_gmt":"2014-02-02T04:18:52","slug":"eggs-benedict-smoked-salmon-recipe","status":"publish","type":"post","link":"https:\/\/thehoneycombers.com\/singapore\/eggs-benedict-smoked-salmon-recipe\/","title":{"rendered":"Eggs Benedict with Smoked Salmon"},"content":{"rendered":"<p><strong>Ingredients (Serves 4)<!--more--><\/strong><\/p>\n<ul>\n<li>4 eggs<\/li>\n<li>2 tablespoons white wine vinegar<\/li>\n<li>2 English muffins, halved<\/li>\n<li>A little butter, for spreading<\/li>\n<li>8 slices smoked salmon<\/li>\n<li>Chopped chives, to serve<\/li>\n<\/ul>\n<p><strong>Optional suggestion from Violet Oon, of Violet Oon\u2019s Kitchen<\/strong><\/p>\n<ul>\n<li>Sprinkle of Japanese Shichimi Togarashi &#8211; a spicy powdered assortment of dried chili peppers and other seasonings like orange peel, sesame seeds, Japanese pepper, ginger, and seaweed.<\/li>\n<\/ul>\n<p><strong>For the Hollandaise sauce<\/strong><\/p>\n<ul>\n<li>2 teaspoons lemon juice<\/li>\n<li>2 teaspoons white wine vinegar<\/li>\n<li>3 egg yolks<\/li>\n<li>125g unsalted butter, diced<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<ol>\n<li>For the Hollandaise sauce, squeeze the lemon juice into a small bowl and add the vinegar. Whisk in the egg yolks until light and frothy.<\/li>\n<li>Place the bowl over a pan of simmering water and continue whisking. Add the butter gradually, until the mixture thickens. Tip: if it looks like it might be splitting, then whisk off the heat for a few minutes.<\/li>\n<li>To poach the eggs, bring a large pan of water to the boil and add the vinegar. Then lower the heat until the water is simmering gently.<\/li>\n<li>Lightly stir the water to produce a slight \u2018whirlpool\u2019, and then slide in the eggs one by one. Cook each for about 4 minutes.<\/li>\n<li>Lightly toast and butter the muffins and add a few slices of salmon on each half.<\/li>\n<li>Top with an egg and spoon some Hollandaise sauce over. Garnish with chopped chives and, if you like, a sprinkle of Japanese Shichimi Togarash before serving.<\/li>\n<\/ol>\n<p>We\u2019ve included a\u00a0printable of <a
