{"id":17619,"date":"2014-02-15T15:00:10","date_gmt":"2014-02-15T07:00:10","guid":{"rendered":"http:\/\/www.thehoneycombers.com\/singapore\/?p=17619"},"modified":"2014-02-15T15:00:10","modified_gmt":"2014-02-15T07:00:10","slug":"roasted-baby-potatoes-and-asparagus-pesto-recipe","status":"publish","type":"post","link":"https:\/\/thehoneycombers.com\/singapore\/roasted-baby-potatoes-and-asparagus-pesto-recipe\/","title":{"rendered":"Pesto Baby Asparagus and Potato Salad"},"content":{"rendered":"<p><strong>Ingredients (serves 4)<!--more--><br \/>\n<\/strong><\/p>\n<ul>\n<li>250g cherry tomatoes, halved<\/li>\n<li>1 tsp sugar<\/li>\n<li>2 garlic cloves, crushed<\/li>\n<li>2 tbsp balsamic vinegar<\/li>\n<li>2 bundles baby asparagus<\/li>\n<li>500g new potatoes, halved<\/li>\n<li>Salt and pepper for seasoning<\/li>\n<\/ul>\n<p><i>For the pesto<br \/>\n<\/i><\/p>\n<ul>\n<li>Small handful of fresh basil leaves<\/li>\n<li>1\/2 garlic clove<\/li>\n<li>50ml olive oil, or enough to loosen the pesto<\/li>\n<li>Lemon juice, to taste<\/li>\n<\/ul>\n<p><strong>Method<br \/>\n<\/strong><\/p>\n<ol>\n<li>Preheat the oven to 190C\/375F. Place the halved cherry tomatoes on a baking tray, add the garlic, sugar, and balsamic vinegar and cook for one hour then remove and set aside.<\/li>\n<li>Turn the oven up to 200C\/400F. Trim the ends of the asparagus and place on a baking tray. Drizzle with oil, season and roast in the oven for 6-8 minutes.<\/li>\n<li>Meanwhile, boil the halved potatoes until cooked through, drain and set aside.<\/li>\n<li>Add the basil leaves to a blender along with half a clove of garlic. Drizzle in olive oil while blending until you reach a loose consistency. Add lemon juice and season to taste with salt and pepper.<\/li>\n<li>Combine asparagus spears, potatoes, and cherry tomatoes in a large bowl, dress with the pesto, and serve.<\/li>\n<\/ol>\n<p>The best part?
