Helmed by Spanish-born Chef Antonio Oviedo, the contemporary bistro offers diners a seasonality-driven menu influenced by &#8220;the gifts of soil, land, and sea&#8221;. As its name would suggest, this <a href=\"https:\/\/thehoneycombers.com\/singapore\/hot-new-tables-april-2017-new-restaurants-in-singapore\/\" target=\"_blank\">new restaurant<\/a> makes its home in a garage that was used\u00a0to house cars of professors in the Horticulture Department of the former Economic Garden. But, we\u2019ll spare you the history lesson, because we know you\u2019re here for the food, and you are <em>certainly<\/em> in for a treat at this lush gastronomic retreat.<!--more--><\/p>\n<p>Our meal began with a medley of starters \u2013 the Botanico salad, smoked sardines and lamb tartare. The Botanico salad was a refreshing mix of heirloom tomatoes, ca\u00f1arejal cheese, pickled beetroot, black radishes, charred cucumber, fresh figs, and an aromatic herb dressing. The smoked sardines (smoked in-house) was\u00a0a distinctively savoury dish that was paired with a creamy white ajo blanco sauce. However, it was the lamb tartare that won me over. Swapping out beef for chopped lamb tenderloin was an interesting switch\u00a0of flavours, but the addition of a cold, creamy mustard ice cream was what distinguished the dish for me.<\/p>\n<figure id=\"attachment_130541\" aria-describedby=\"caption-attachment-130541\" style=\"width: 930px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"size-full wp-image-130541 lazyload\" data-src=\"https:\/\/d22ir9aoo7cbf6.cloudfront.net\/wp-content\/uploads\/sites\/2\/2017\/03\/Botanico-Food.jpg\" alt=\"\" width=\"930\" height=\"550\" data-srcset=\"https:\/\/static.thehoneycombers.com\/wp-content\/uploads\/sites\/2\/2017\/03\/Botanico-Food.jpg 930w, https:\/\/static.thehoneycombers.com\/wp-content\/uploads\/sites\/2\/2017\/03\/Botanico-Food.jpg 300w, https:\/\/static.thehoneycombers.com\/wp-content\/uploads\/sites\/2\/2017\/03\/Botanico-Food.jpg 768w\" data-sizes=\"(max-width: 930px) 100vw, 930px\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 930px; --smush-placeholder-aspect-ratio: 930\/550;\" \/><figcaption id=\"caption-attachment-130541\" class=\"wp-caption-text\">Lamb tartare (left) Botanico Salad (right)<\/figcaption><\/figure>\n<p>The other two dishes that impressed me the most were the chargrilled Carabienero shrimp and the roasted pigeon. The plump shrimp came shelled and was served as\u00a0a rich risotto-esque dish of bomba rice cooked in prawn bisque. It was hearty and comforting as a main, and definitely a dish I&#8217;d order again. As for the\u00a0pigeon, it was done two ways \u2013 the breast was pan-seared to a medium rare, while the pigeon leg was cooked sous vide &#8217;til\u00a0tender. It was gamey, richly-flavoured, and everything you\u2019d expect from a pigeon dish.<\/p>\n<p>Dessert is perhaps the menu item that takes the most inspiration from Botanico&#8217;s lush surroundings. The \u201cTropical Fruits\u201d dish is one that&#8217;ll turn heads; a colourful display of white chocolate turmeric ganache, deep fried laksa leaf, meringue, laksa leaf ice cream, sable crumble, and a trio of palm fruit, longan, and jackfruit \u2013 giving nods to the\u00a0tropical fruit trees that used to line the Botanic Gardens area.<\/p>\n<figure id=\"attachment_130540\" aria-describedby=\"caption-attachment-130540\" style=\"width: 930px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"size-full wp-image-130540 lazyload\" data-src=\"https:\/\/d22ir9aoo7cbf6.cloudfront.net\/wp-content\/uploads\/sites\/2\/2017\/03\/Botanico-Cocktails.jpg\" alt=\"\" width=\"930\" height=\"550\" data-srcset=\"https:\/\/static.thehoneycombers.com\/wp-content\/uploads\/sites\/2\/2017\/03\/Botanico-Cocktails.jpg 930w, https:\/\/static.thehoneycombers.com\/wp-content\/uploads\/sites\/2\/2017\/03\/Botanico-Cocktails.jpg 300w, https:\/\/static.thehoneycombers.com\/wp-content\/uploads\/sites\/2\/2017\/03\/Botanico-Cocktails.jpg 768w\" data-sizes=\"(max-width: 930px) 100vw, 930px\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 930px; --smush-placeholder-aspect-ratio: 930\/550;\" \/><figcaption id=\"caption-attachment-130540\" class=\"wp-caption-text\">Gin&#8217;onic (left) Thyme Lemonade (right)<\/figcaption><\/figure>\n<p>Complementing our meal was a selection of distinctively refreshing cocktails. If you\u2019re after something simple, try the Garage Gin\u2019onic, a classic gin and tonic with elderflower syrup for a floral twist. Want something slightly out the ordinary instead? Opt for the Thyme Lemonade \u2013 vodka, thyme-infused simple syrup, fresh lemon juice and lime juice.<\/p>\n<p>And, the cherry on top? After a feast like that, you\u2019ll get to stroll across the sprawling Botanic Gardens to shake off the food coma.
