Craft beers and beer towers come together in this new infused craft beer bar by the folks from Little Island Brewing Co
Refined and sophisticated aren’t exactly words you’d commonly associate with beer towers. See, when I think of beer towers, sweaty, alfresco eating houses with larger-than-your-head flasks come to mind; unruly sessions that are usually less about beer appreciation, and more often heated dares about who can gulp down the most without passing out. Classy, I know!
But I’ve just stumbled upon a Hot New Bar at The South Beach that looks to elevate the beer tower experience, and it’s being pumped out by the team behind Little Island Brewing Co. at Changi Village. The Alchemist Beer Lab is all set to be Asia’s first and only “infusion beer lab”, and it’s not some horn-tooting proclamation that’s to be taken lightly.

Lined along the marble-coated bar is a row of 16, three-litre beer infusion towers, that we hear have come to fruition thanks to mixology science. In each specialised tower, ingredients are placed in a fusion chamber, and compressed gas is released before beer is injected into the tower. This helps to create a tight, impeccably-controlled brew where flavours are extracted fully from the ingredients, resulting in a hybrid concoction that you’d commonly find in craft beers. While eight of the towers will contain signature beer from Little Island Brewing Co., the remaining eight will feature flavours exclusive to The Alchemist, and these are expected to change regularly to keep beer guzzlers on their toes. Highlights will include lager with grilled pineapple and star anise, stout with dark chocolate and chilli, sweet and semi-dry ciders and wines, and other offerings that incorporate ingredients such as spices, nuts, and even coffee. Don’t chug these bevvie beauts; you’ll want to savour every sip.
And ’cos drinking always makes you peckish, you’ll be pleased to hear that The Alchemist Beer Lab rolls out European-style tapas like slow-cooked pork cheeks and duck fat chips, and these are only just the tip of the iceberg. Who knows what other new-fangled brews and bites you’ll find whipped up in this libation lab? If you ask us, it sounds like it’s worth a visit… or two.
