Organic goods, slow food, mindful consumption – if you’re trying to live a better life, then these terms will be all too familiar to you. And if you’re wondering if there’s any place to go where you can check all of the above, you’re in luck because Grand Hyatt Singapore’s mezza9 has revamped its menus to include even more dishes that highlight sustainable, quality produce in one spectacular spread….
What’s on the menu?
As a multi-concept dining destination, mezza9 focuses on food that’s “thoughtfully sourced and carefully served”. It features six kitchens – each specialising in a different cuisine. And because we all enjoy a good cocktail too, a gin and tonic and martini bar have been added to the mix.
Swing by for lunch and you’ll get to choose between a two-course treat (from $35) and a three-course feast (from $45), both of which you can customise with more than 10 specials to choose from. For starters and mains, pick from new creations like the Asian-inspired Maine lobster hot pot with ginger fried rice. Mezza9’s ever-popular blue swimmer crab cake is still a star, so don’t worry about not being able to enjoy your favourites. The three-course option comes with a dessert of your choice, so you can pick from items like the ‘La Esmeralda’ chocolate pudding and the peach compote with creamy vanilla custard and flaky, buttery puff pastry.
For dinner, go a la carte and order a range of dishes to share with everyone at the table. Newcomers like the clam and lobster bake from the Grill kitchen are a must-try. It showcases a colourful mix of fresh ingredients, including Aceh tiger prawns, Manila clams, and black mussels. There are also plates from the Thai and Japanese kitchens, so if you’re up for something fiery, go with the Nuea Yang grilled Black Angus beef salad with tamarind and chilli, or choose the Sushi Kiwami if you’re craving an exquisite nigiri and sashimi spread.
Keeping it sustainable
The folks at mezza9 have made it a point to use sustainable ingredients in these new culinary additions. For many of the dishes, the seafood is certified sustainable by the Marine Stewardship Council (MSC) and the Aquaculture Stewardship Council (ASC), the two organisations that set standards for sustainable fishing and aquafarming.
On top of that, mezza9 uses herbs grown from the hotel’s very own rooftop gardens, as well as organic greens from farms in Singapore and Cameron Highlands. With these efforts to rely on local and regional produce rather than have them air-flown in from Australia and Europe, Grand Hyatt has managed to reduce its carbon footprint by approximately 130 times for each 150kg shipment.
