The world’s most remote restaurant, Koks from Faroe Islands, is coming to Singapore in 2022 for a four-week residency. Situated between Iceland and Norway, the two Michelin-starred restaurant only opens for nine months each year and it’s typically booked out six months in advance.

Led by executive chef Poul Andrias Ziska, the team will showcase its finest seafood, freshly foraged herbs and rare products.
As part of the Chef Residence programme at Grand Hyatt Singapore, Koks will feature its signature dishes and plan a couple of new creations with Asian ingredients and inspirations. The menu includes items like fermented ocean perch with fermented lamb intestines and cheese, cod filet with fermented cabbage and caviar, and langoustine roll. There’ll also be a wine pairing list curated by sommelier Karin Visth in collaboration with the team at Park90. So immerse yourself in a once-in-a-lifetime dining experience!
The residency will accommodate 30 people at lunch and 45 at dinner. Prices start from $228++ for lunch and $458++ for dinner, with wine pairing available at an additional $148++ and $248++. Priority booking starts from 7 December and general booking opens on 14 December for the public.
